Layer in a dish from bottom to top:
Fat-free vegetarian refried beans (season to taste)
Thin layer mashed avodaco
Fat-free or low fat shredded cheese
Thin layer sweet corn (canned)
Tomatoes
Diced red onions
Layer of fat-free or low fat sour cream
Top with chopped green onions, if desired. Refrigerate until you are ready to eat.
I made this a while back. I tried to base it on the unhealthy, but tasty version. This is what I came up with. I had this with baked tortilla chips, but it is also great as a dip for veggies.
