Veggie Pate
1 cup sunflower seeds, toasted, ground
1 cup shredded carrots
½ cup minced onions, lightly browned
½ cup chopped celery, lightly browned
1 cup mashed potatoes
¼ cup minced fresh parsley
1 ½ teaspoon minced garlic
¼ cup whole wheat flour
¼ cup corn flour
1 tsp. salt
¼ to ½ tsp. black pepper
2 tsp. basil
½ tsp. garlic powder
1 tsp. paprika
¼ cup lemon juice
½ nutritive- not bread- yeast
Lightly toast sunflower seeds by baking in a 350 degree oven for a few minutes until they brown slightly. brown onions, celery and carrots very lightly in a little oil in a skillet. in a large bowl, blend seeds, browned vegetables, mashed potatoes, parsley, garlic, whole wheat and corn flour, salt, pepper, basil, garlic powder, paprika, lemon jice, and nutritive yeast. blend well. pack into either a 9 by 5 inch loaf pan or a 9 inch square pan. bake until set, 30- to 45 minutes. chill very well before clicing for salads and sandwiches..
