Tomato and Spelt (faro) salad
1 cup whole spelt
2green onions, thinly sliced
2cups diced tomatoes
1 bunch arugula torn
¼ cup loosely packed fresh mint leaves, torn
Dressing
4tsp. red wine vinegar
1small garlic clove, minced
½ tsp. salt
¼ tsp. pepper
3tbsp. extra virgin olive oil
1cup cubed feta cheese (optional)
rinse spelt a few times in cold water. in pot of boiling salted water, cook until tender but firm, 30 to 35 minutes. drain and chill under cold water, drain well. transfer to bowl along with green onions and tomatoes. add arugula and mint. dressing: wish together vinegar, garlic, slat and pepper, gradually whisk in oil. toss with salad. top with cheese makes 4 servings
per serving: about 296 cal, 8g. pro, 12g fat, (2g.sat. fat), 46g. carb, 10g. fibre,
