1 pkg. (8oz.) marzipan
2 egg whites
½ cup granulated sugar
2tsp. finely chopped lemon rind
½ cup toasted pine nuts
in food processor, coarsely chop marzipan; spread on baking sheet and let stand for 4 hours or until dry, or for up to 24 hours. Return to food processor; chop until fine crumbs form.
In large bowl, beat egg whites until frothy; beat in sugar, 2 tbsp. at a time, and lemon rind until soft peaks form. fold in marzipan. drop by tablespoonfuls about 2 inches apart, onto greased baking sheets. top with pine nuts, lightly pressing with back of spoon . bake in 350 oven for about 20 minutes or until evenly browned. makes about 32 cookies
