Almond Apricot Squares
¾ c packed dried apricots
¼ c butter
1 c all purpose flour
¾ c granulated sugar
2 tbsp. 1% yogurt
2 eggs
pinch salt
½ c slivered almonds
in small saucepan or microwave able dish combine apricots with enough water to cover. cover and bring to a boil or microwave at high for 1 minute . remove from heat. let stand for 1 minutes. drain and let cool; chop finely and set aside. in bowl and using pastry blender or two knives cut batter into flour until in fine crumbs. stir in ¼ cup of the sugar and yogurt until combined . press into greased 8 inch square cake pan; bake in 40 oven for about 20 minutes.
meanwhile in bowl beat together eggs, remaining sugar and salt just until combined ; stir in apricots. pour over base; sprinkle with almonds. bake in 350 oven for about 30 minutes. let cool on rack cut into squares. makes about 18 squares
