Chicken Cream Cheese Rollups
2 skinless, boneless chicken breast halves (pounded into cutlets) (appr 4 oz each)
4 oz ff cream cheese
Fresh chopped chives to taste
1 tablespoons melted Smart Balance spread or spray olive oil from a mister
Directions
1 Preheat oven to 350 degrees F (175 degrees C).
2 Spread about 2 oz of chive seasoned ff cream cheese on
the bottom of each breast half. Roll up (hold with toothpicks) and place in a
casserole dish. Drizzle melted Smart Balance spread
over rollups or mist with olive oil.
3 Bake in the preheated oven until chicken is cooked through
and juices run clear.
4(Optional) Melt extra cream cheese with chives in the microwave,
and use as sauce for the chicken.
Makes 2 servings.
