Tofu Guacamole
3 tbsp. lemon juice
¾ cup mashed tofu
1 jalapeno pepper
3 to 4 ripe medium avocados
1 to 2 small tomatoes very finely chopped
1 small onion very finely chopped
1 to 2 tsp. finely chopped green chili peppers
½ tsp. salt
½ tsp garlic powder
pour the lemon juice into a blender. add the mashed tofu, bit by bit and blend until smooth. chop jalapeno very finely and add to the tofu- lemon mixture, and blend thoroughly. mash the avocados in a bowl , add the tofu mixture and all the other ingredients, and combine thoroughly.
