Chili-Lime Chicken Kabobs
Makes 4 servings

3 tbsp olive oil
1 1/2 tbsp (low-sugar) red wine vinegar
Juice of one lime
1 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
1 pinch cayenne pepper (to taste)
1 pinch salt (to taste)
freshly ground black pepper to taste
1 lb skinless, boneless chicken breast halves - cut into 1
1/2 inch pieces
Assorted Bell Peppers & onions, cut into chunks

Directions
In a large bowl combine olive oil, vinegar, lime
juice. Measure in the chili powder, paprika, onion powder,
garlic powder, cayenne, salt and pepper. Whisk until the oil
and vinegar are emulsified.

Add chicken cubes to the bowl. Cover & place in
refrigerator for a few hours.

Thread chicken on to skewers, alternating w/ the peppers
and onions. Grill the chicken over medium-high heat for about
10 minutes or until the juices run clear.

This marinade is awesome!! I didn't make it as kabobs since I didn't have peppers or onion (I need to go shopping, I know) but I made the chicken and mixed it in with some brown rice and salsa . . . yumm!
