My program calls for this one meal that contains 3 ounces of extra lean beef as my protein. Well, for weeks I eat the beef with the veggies via "taco salad" and mixed with vegg but it started "sicking me out" so I came up with this alternative.

Assuming 3 ounces extra lean beef = 10 egg whites, the following is a good sub for a 3 ounce lean beef meal, with pretty close macros.

1/2 small onion chopped
1/2 red pepper chopped
1 small pack frozen spinach (thaw)
4.5 ounces browned extra lean ground beef
15 egg whites or egg beaters (my preference)
season - italian Ms. Dash, spike, garlic powder

3 servings

Mix all together and put into a small casserole dish and bake at 375 for 50 min. Top with cheese and a TBSP. tomato sauce if you plan permits.

I just eat this with a small salad. Nice change.
