Anyone have ideas of how to use it?

You can use it in lots of things. Google recipes with fresh ginger. I use it in some asian dishes I cook.

Oh, and a trick to keep it fresh longer because you don't use much. You can freeze it.

this is how I used it the other day with some brown sugar splenda, and chili sauce and spme very vewry thin sliced top round sweet onions and green onions :yum:

Excellent to jazz up chicken. I'm not really a green onion fan, I use shallots instead.

If you like spicy foods, add two or three chunky slices (maybe the size of a nickel) to the liquid when you make brown rice, then sprinkle in some chili powder and a bit of lime juice the last 5 minutes your rice cooks.
