Protein Brownies
(By: Leigh-anne)

1 cup oats
3 scoops chocolate protein powder
1 cup water (may need more or less)
3 T natty PB
1 t vanilla extract
Splenda to taste

Preheat oven to 350. Cook the oats until done. Stir in protein powder and add in enough water so the consistency becomes like cake batter. Then stir in PB, vanilla, and splenda until evenly mixed. Spray 8x8 baking dish with Pam and put batter in. Bake for about 20 minutes.

"It was like a cake when I took it out, I cut into 4 squares and they came out just like brownies! Mmmmm.

I'm thinking now if I had some cocoa powder that would be good to make it more chocolatey. You can definitely play around with the ingredients. The PB isn't necessary, either, if you want lower fat. I put low sugar raspberry jam on top and it was delish."

Do you think the pb could be replaced with a couple egg whites to make it more of a p/c food?

I dunno...

Someone on another forum last night made these and said they taste like oats and protein powder.

Here's another one that I hear is really good:

3/4 cup oat flour (you can grind oatmeal in a food processor for this)
1/2 TBSP cornstarch
1/4 tsp baking soda
1/4 tsp salt
1/2 cup cocoa powder
Splenda equivalent to 1 c sugar
2/3 cup fat-free plain yogurt
2 egg whites, whisked

Combine all dry ingredients in a bowl.
Stir in yogurt and egg whites.

Bake in 8x8 sprayed pan for 30 minutes, in preheated oven, @ 350 degrees (F).

Entire recipe:
448 calories
8.5 g fat
16.67 g fiber
30.5 g protein
62.38 g carbs

You can add protein powder to this, too, if you want.
