I do my lifting sessions first thing in the AM before work, I get up, down a sugar free energy drink, and head to the gym. I know I should be eating something first, but what? I was thinking of having a couple of rice cakes for carbs, but do I really need to have protein too?

Any fast and simple pre-workout meal suggestions?

Yes on the protein

Whey protein and something like maltodextrin, dextrose or Gatorade is probably your best bet.

Yes, she trains first thing in the morning; light and fast is good.

That'll probably be just fine

Just get something in, although I'd personally probably want something a bit faster.

Isn't that basically the same thing as Gatorade? It's fine

I'd just have a normal meal after HIIT; don't over think it. I never have a PWO drink after HIIT workouts. I just eat my next meal.
