View Full Version : Protein Pancake "Bread"

Correct me if I'm wrong, but is the recipe:
1/2c oats
1/4c cottage cheese
1/4c egg whites
pinch of baking powder
I was wondering what you guys thought if I made these a little thinner (maybe add some water?) and cooked them and brought them into work topped with tomato, chicken, mustard, etc like a sandwich?
Or would that just taste like crap? :lol:

are those the right ratios though? i know some people add more cc or egg whites... any ideas as to what would make a good consistency?

My dear friend Pam devoloped this recipe for an "herb bread"
Pam’s “ Herbed Pan Bread “
4 egg whites
1/2 cup oats
1/4 cup lowfat Cottage Cheese
1 tsp. baking powder
1/4tsp. sage
1/4tsp. rosemary
1/4 tsp. lemon pepper
Pour into two-three small mini loaf pans, bake for 25 to 30 minutes. I slice this and toast it in a toaster oven and make a small meal sandwich. It's also good as muffins with 1/3 of a cup of shredded lowfat cheddar cheese.

that fits into 2-3 loaf pans!?
I'd think you would have to at least double that lol
sounds REALLY Good though, im gunna make some ala pancake like first i think :)

not regular loaf pans but the MINI loaf pans..huge difference...

arent the mini pans still a fairly avg size?
i mean i can see if filling 1.5 mini pans...

...the mini loaf pans I have are more like muffin tins - each loaf is about the size of two average muffins.

These are fantastic as Protein pancacke muffins. :love: I made them last night as muffins instead of my usual pancake form (exact same recipe, besides the baking powder) and they turned out great!
1/4 c oat bran
1/4 c oats
1/4 c cottage cheese
5 egg whites
1 t baking powder
1 T cinnamon
1/8 t liquid Splenda (or 1 packet S&L)
1/4 t maple flavoring
Mix it all and pour into stick-free muffin tins (this made 8 for me). Bake at 350 for 20-25 mins.
They're easier for me to eat and carry to work this way. All mental, I know... :dry:
