View Full Version : Stevia pancake syrup
With everyone trying to rid their pantries of artificial sweeteners, I figured this might be useful to people like me who are hooked on Walden Farms' pancake syrup.
I haven't tried this yet because I have to get some of the ingredients, but I will try it tomorrow and let you know. :thumb:
1t Liquid Stevia (see recipe) or 1t liquid Splenda (= 4c sugar, 0 carbs)
1T Maple imitation extract (3 carbs)
1/2t Imitation Butter Flavor (0 carbs)
1/4t Lemon extract (0.25 carbs)
2T Glycerin (0 carbs)
1/8t Salt (0 carbs)
1/2t Xanthan Gum (0 carbs)
25oz Water (room temperature) (0 carbs)
Blend ingredients in blender - put in xantham gum last and slowly trickle it in the blender as the blender is running. Allow volume to compress. Store in 'used' DaVinci bottle or other 750 ml bottle -refrigerate. Do not worry if there are tiny tiny gum gobules in it. They will dissolve within 24 hours of refrigeration.

It's food grade glycerin. Don't melt suppositories to make it, MB! And don't use too much because I'm not responsible for what happens if you do! :lol:

I think I'll either eat the pancake dry or spread some no-sugar added all fruit spread or (apple) butter on them.

And I may make it and throw the entire bottle down the drain. But I'll give it a try and see if it's any good. :shrug:

If anyone is interested there are a number of cookbooks that give recipes using stevia. My favorite is "The Stevia Cookbook" by Ray Shahelian and Donna Gates and the book also gives a history of stevia and discusses the biomedical literature (the book is dated though). You can buy it at Whole Foods or online at Amazon.
Also SweetLeaf which is one of the major companies marketing stevia in North America has a nice database of recipes and all kinds of useful info on their website: www.stevia.com

brilliant Cara ... I just might try this too !!! ... my maple extract is not imitation, but I kinda wish it were as the "pure" just tastes weird !!!!

i have two stevia cookbooks(for yrs). have to see which ones
The verdict: It's really good, actually! I'm using it now just out of the blender, and I think it will be better once it comes together more and sits in the fridge.
I think you can play with the extracts a bit, because the lemon extract really stands out in the flavor but it's very good for fake syrup. :thumb:
It's not as sweet per teaspoon as the Walden Farms stuff, but I don't think you could get it that sweet and not make it bitter with the stevia. Still very good, though, and I'm a syrup addict! :lol:

It's liquid, but make sure it's food grade and can be taken internally. Mine is made by NOW but it doesn't matter much who makes it as long as it is for internal use.
