Red Velvet Cookies with Cream Cheese icing (WARNING: these are highly addictive and may cause your ass to expand :lol3: )
2 one-ounce squares unsweetened baking chocolate
1/2 cup butter at room temp
2/3 cup brown sugar, firmly packed
1/3 cup white (granulated) sugar
1/2 tsp baking soda
1/2 tsp salt
1 large egg
1 tbsp red food coloring (yes, that's one tablespoon)
3/4 cup sour cream
2 cups flour (pack it in the cup when measuring)
1 cup semi-sweet chocolate chips
Preheat oven to 375 with rack in middle position. Line cookie sheets with parchment paper and spray with Pam.
Microwave chocolate squares and stir until smooth and set aside to cool.
Combine butter, br sugar and white sugar with electric mixer. Beat on medium until smooth (less than a minute.) Add baking soda and salt and beat on med. another minute. Add egg and beat on med. another minute. Add red food coloring and mix for about 30 seconds.
Shut off mixer and scrape down the bowl. Add melted choc. and mix for a minute on med. Shut off and scrape again. At low speed mix in half the flour (one cup). Mix in sour cream. Scrape again and add rest of flour. Beat until fully incorporated.
Stir with a spoon and mix in choc. chips by hand.
Drop by teaspoon onto cookie sheet. Bake at 375 for 9-11 minutes or until they rise and become firm (I did 9 minutes). Slide parchment from cookie sheet onto wire rack and let cool while next batch is baking. When cookies are cool, peel off parchment.
Cream Cheese Frosting
1/4 cup softened butter
4 ounces softened cream cheese
1/2 tsp vanilla extract
2 cups icing (powdered) sugar
Mix softened butter with softened cream cheese and the vanilla until mixture is smooth. Gradually beat in icing sugar.
Ice cookies and EAT!!
