View Full Version : How do you make Mashed Sweet Potatoes?

I need a recipe for Mashed Sweet Potatoes, or maybe even a recipe for Sweet Potato casserole - something clean preferably, but I'll take anything at this point - the fact that mom even considered my suggestion of mashed sweet potatoes instead of regular potatoes makes me happy! :clap:

boil sweet potatoes until tender. let them rest on paper towels to remove extra water.
remove skin and mash (fork works)
add cinnamon, nutmeg to taste.
splenda (1/4 c per potato)
EVOO (1t per potato)
butter buds (1T per potato)
put in 350 deg oven for 20-30 mins.
if you want to be a little bad swap out the EVOO and butter buds for real butter. MMMMMM. a little bit of heavy cream is good too.

I wrap mine in a damp paper towel and nuke in the microwave for 3 minutes. I turn it over then nuke another 3 minutes. Peel, then mash with the Splenda brown sugar and cinnamon and add a wee bit of milk if it looks like it might need it. So. Yummy. I made this for my kids tonight for the first time and my little girl got excited after the first bite and exclaimed " Mmm! Mommy, this is good!! It tastes like pumpkin pie!!" :)

For some reason I really like my sweet potatoes with salt instead of sugar. They are already so naturally sweet, so I like to add salt and garlic powder and minced/dried onion to them after they are mashed. Yum!

Easy and yummy,
I peel my potatoes, cut them into chucks and put them into a glass (micro safe) bowl with water to cover. I nuke them until they are soft and drain the water. I don't worry about them being super fine so I just break them up with a fork and add some splenda brown sugar. No need for butter or substitute.

it would. probably taste a lot better too. it will make the mix a bit more moist so you'd probalby need to add a couple tablespoons of flour and/or bake a few minutes extra.

You guys know that this would make regular brown sugar clean, right?
Splenda Brown Sugar is just that; Slpenda w/ brown sugar mixed in. I wouldn't consider it clean.

I wrap them in foil paper and put them in the over at 450 degree for 30 min, depending the size of the sweet potatoes. After this time, I let them to cool down a little bit and cut them in half to take the mushy out. No peeling needed, and they still have most of their vitamins and minerals ( not the case when you cook them in microwave.)
I mash them with a fork and add a little bit of cinnamon. SO yummy!!

I heard back on my ? about brown sugar/splenda. I'm allowed to have it in small packets with my oatmeal, it evidently isn't a huge deal. The only time I'm totally prohibited is in the days right before the show date. So far all of you who can't have it, neener neener neener neener just kidding. :innocent:

I use this method when I want a bake yams type deal without all the calories.
I am doing this with 1-2 serving size potatoes.
I bake the potatoes in foil in the oven, scoop out the insides when they are done.
I mash them with 1-2 tbsps ff sourcream (it cuts some of the sweetness but adds creamy). .25c pineapple juice. Nutmeg, vanilla and cinnamon to taste. I mix in raisins sometimes for a change or, if using fresh pineapple, a couple pieces of pineapple.

Mashed Sweet Potatoes
Peel and boil sweet potatoes until soft
Drain & put into bowl
Add cinnamon and splenda
Mix with electric mixer until smooth
It's been awhile since I've made them this way so I can't remember how long it took to boil, but they were tasty.
