I'm thinking of tweeking a simple vinaigrette a bit

I know you guys are experienced with this stuff -- any thoughts? :p

2/3c white wine vinegar
1/4c EVOO
2 tbsp dijon mustard
((any good spices I should add? or lemon?)

Does that sound like it would work?

What about adding garlic? Or ground black pepper? My mother has used that recipe for years and it has always been popular. Very tasty.

that sounds great!

Are the proportions good?

The original calls for 1/2c of EVOO -- I thought that was a lot of olive oil

Just add the oil slowly as you are whisking it together. The amount of oil a is personal preference. I usually don't use any myself, and just a couple tablespoons when I'm cooking for others. Just add and taste...add and taste....

You should definitely check out Walden Farms Calorie Free/Fat Free dressings.. I know you can get them on Netrition.com, but they might be available in your grocery store, since you need them in a hurry.. Very tasty.. I like the Bacon Ranch and the Creamy Italian.. The raspberry vinaigrette is very sweet (too sweet for me) but still decent! Just an FYI... Hope this helps!

I have not tried the blue cheese, if they make it.. I've gotten the Bacon Ranch, Raspberry Viniagrette, Creamy Italian and Caesar.. All are pretty tasty in my opinion...
