View Full Version : cooking eggs ahead of time?!

Hey everyone, I'm just getting ready to get all my meals for tomorrow (I'm working on planning better :)
Anyways, I planned on having scrambled eggs tomorrow morn. on Ezekial bread but are eggs ok the next day after you've cooked them? I'm kind of nervous about doing this but I'm not sure why
I guess growing up everytime we had left over eggs from brunch my parents would just throw it away. I guess I assumed it was because eggs leftover are yucky
I've done it it before and I'm alive ;)

It really doesnt take that long to cook eggs. About the time it takes to toast the bread.
that said, i've cooked my eggs the night before, when i'm running out of the house at 5am :blink: to train.
If i didnt let them cool, there was alot of moisture in the container. So i'd either put a paper towel in the container on the side or allow them to cool all the way down.
I dont reheat them, so im not sure how they'd taste.

I have to be at the gym early tomorrow and will be pressed for time between work and moving so I wanted to plan ahead...hmmm not sure if i'm brave enough to try the eggs

eh, just give'r. I used to do it ALL the time. I'm still kickin' ;) Then again, I like cole food and hate warm food, so I'll cook up everything for the week, including dinner for that night, and then put it all in the fridge till it's cold, then eat it all cold....anyway, whatever, egg whites cooked the night before are fine.

I've made eggs a few days a head (ie Saturday/Sunday for Tuesday or even Friday). I hate cooking when I get home during the week (I'm usually not home until 9 or 10). I've had no problems.

I do it pretty regularly and have for a couple of years; actually, I kind of prefer them this way since I reheat them in the microwave and that dries them out a little more to take away some of the volume and intensify the flavour of the hot sauce I use.
I've definitely done it enough to call it safe but definitely try to keep them cool after cooking so you don't encourage anything to grow.
Related Q... I've read that heat breaks down protein, does that mean that we are lowering the quality of the protein if we reheat the eggs? BTW, I know the 1st heating is required to break down the avidin.
Heat denatures protein, but that's not very relevant since protein is denatured during digestion anyway. The constituent amino acids don't change.
BTW, are you posting under two different user names?

nope, only one account for me... did someone else post the same question? If you're monitoring IP addresses it's possible that my wife is on as well but I'm not sure what her username would be.
I had thought the problem with the protein was related to a folding of the amino acid chains rendering them undigestable/unusable but it's good to know that isn't the case. Thanks for the reassurance

This is what I've started to do. Then, I can just mix the in muy oats in the morn'.

That must be it then.
I know who your wife is. :p
And no problem. I think it's a common thought that heat would cause damage. But like I said, yes it changes the proteins, but so does digestion. :)

I cook my eggs the night before every day. No problems.
