I'm looking for some new ideas for making chicken completely clean. I was wondering what everyone puts on theirs? I've done soy sauce with garlic and ginger, and Emeril's spice, but was wondering if anyone has another combination of spices? Thanks in advance!

Well I like to marinade it in Mustard mixed with water and a little garlic. Instead of garlic I'll sometimes put a little splenda so it's kind of like honey mustard. I also like, thanks to Jen, marinading it in dill pickle juice, garlic and chicken broth. They both don't sound that great but they really are!

Try wine vinegar, lemon juice and dill and dijon - yum.
I also like to stir fry mine with paprika, chile powder and powdered mustard - it actually is good.

Try this - it's how I make fajitas: SO good:

Marinade chicken in:
2 T soy sauce
2 T wine or balsamic vinegar
1-2 T lemon or lime juice
chile powder, mustard and cumin seed, crushed coriander (optional - coriander tastes lemony)

Stirfry it...add tomatoes and lettuce and wrap it up if desired. Delish!!!

I dont do chicken broth, I add italian seasoning. mmm

Have you tried stir-frying chix w/ some veggies? It's pretty good stuff.

Yeah, I love doing stir-fry. I also made chicken kebobs on the grill last night, and realized grilled chicken tastes so much better than baking it lately!

Here's a Chicken Satay recipe that I really love!

2TBS natural pnut butter
1/4-1/2 C low sodium soy sauce
2-4 pks splenda
2 TBS curry
2 garlic cloves chopped
1 tsp hot sauce
6 skinless chicken breasts

Combine/mix all ingredients in a bowl and let marinade for a couple hrs in fridge. Grill on BBQ or bake. Serve over brown rice! :drool:

Oh that sounds really good. :)

I also like just adobo chix in the crockpot. Equal amounts of vinegar & soy sauce. plop the chix in and just cook on low till it's how you like it. Today I'm using 2/3 c soy sauce, 2/3 c balsamic vinegar (trying for the first time) and several chix breasts & thighs (for hubby). This is very good and simple.

Something that we use alot is 1/3 C Italian dressing (Fat free or Light) and 3 T soy sauce...let it marinate for at least 20 minutes. It's so good!!

I have been marinating mine is an Indian Marinade (http://z13.invisionfree.com/ExtremePhysique/index.php?showtopic=72)

I eat it salad, rice and brocolli, beans and salsa, or just plain. I have been doing this for a couple months now, I think I need a change soon.... :huh:

Mine is similar to the Chicken Satay recipe above:

2 Tbsp Natural PB
2 Tbsp Soy sauce
1 Tbsp olive oil
1/2-1 Tbsp lime juice
1-2 cloves garlic, minced
1/2-1 Tbsp fresh cilantro, chopped (optional)

Wisk ingredients together. I usually cut up about 1 LB of chicken breast into cubes and add to the mix. I put it in the fridge for an hour our so and then cook it on my grill pan.

My kids love it, too!

It's really plain I know, but I really like cumin. After the chicken is cooked, I take a fork and shred it---like it would be in a burrito. Then add cumin, salt, pepper, and sometimes salsa. It's really yummy!

-Ms Dash steak spice or the chicken spice one. The rest of the flavors make me wanna puke!

-Montreal steak spice

Another really good rub is the Chef Paul's Poultry seasoning...you rub it on the chicken, and bake, grill, stir fry it. It's very good.

Going to add the cumin to my list of to try's...made the chicken marinated in mustard, splenda and water last night. My new favorite and easy always the magical selling point for me.

Can you buy just pickle juice or do you have to dump out the pickles? :oops:

I made something interesting last night. I took dehydrated onions, smashed them up some. I added a little bit of dill weed, dried garlic then one piece of sundried tomato. I coated the chicken like you would if you were using shake n' bake. It was not bad for a change.

I usually get my charcoal grill fired up, then cook all my chix for the week at the same time. Let's see, what do I use for marinade-
balsamic vinegar w/ FF Italian dressing and garlic
whatever herbs and spices I have, I'll make a rub out of them
my fave has been mustard, soy sauce, Splenda, and balsamic.


My other way is get a big skillet-throw in some onions(sometimes peppers, too) and chicken broth. Once that starts simmering, I throw in my chix breasts. I let those simmer for a long time. Gets really moist and flavorful.

I so :love: to eat my chicken this way. It is sooo scumptious!
