View Full Version : Strawberry Banana Protein Muffins

I'm sure you can make this with any protein powder. These ones turned out really well.

1 cup oat bran (uncooked)
1 cup egg whites
1 cup cottage cheese (I used 2%)
1 scoop pp (I used NX Care strawberry banana 45g/scoop)

Edit: add cooking time 350 for 30 minutes.

I made 11 muffins.

Total macros per recipe:

fat: 13g
carbs: 78

They were pretty good. If you like things sweeter, you could add some Splenda. It think they would be even better if you spread sf jam on top too.

I only had one so far but I could've easily ate the whole plate. :oops:

I just pulled these out of the oven, did 'em at 350 for 20 min.
They smell goooood.
Definitely packing one of these in my lunch bag for work this evening!

I did this recipe with vanilla protein powder and French Vanilla sugar free syrup. They came out pretty good. I am going to experiment with different flavors of protein powder and sugar free syrup. i also think adding some strawberries or blueberries, or some unsweetened applesauce would makes these taste even better.

I have these in the oven now--I omitted the pp and added blueberries, splenda and cinnamon. We'll see how they are. The batter is really good! :p

LOL! No, Oat Bran comes in a box in the cereal section. It's clean. You could probably use oats if you wanted them to have more texture. :)

I just made these the other night. I used 1 cup oats insted of oat bran, the egg whites, 1 cup of 1% cottage cheese, and the GNC banana protein powder I had. It was about 1 1/2 scoops to get around 45g. I added a few chopped up strawberries, too. I used the hand blender and mushed it all up. I spooned it into mini muffin pans, and ended up with 32 little bundles of joy. I baked them for about 20-22 minutes. It came out to maybe 96 cals for 4. We put them in baggies and have them for mini meals.

I could have used some stevia, since they were a little bland. The hubby loves them though.

For those of us who are muffin-impaired, hwo exactly do you cook these things? Just mix everything up and pour it into a muffin mold? Or is there something else needed? (I keep thinking of bread and wondering if you need yeast or something like that...) :confused:

I just dumped the ingredients in a bowl and then used a hand blender to mix it up till the lumps were out. I sprayed the muffin tins with pam and poured it in. I thought there should be more to it, too!

Any thoughts on how to make them less dry? Maybe a little apple sauce???

I think adding more apple sauce or possibly a mashed up banana to the recipe would make it less dry. A mashed banana would also work well as an egg substitute. I don't eat eggs, but I would love to try this recipe, so I'm going to try that out.
