Dont know what i think about it all other than i've done SO much reading about Gluten and GF as it relates to health/inflamation and autoimmune disease.. its interesting.

Interesting points on dairy as well. lots of interesting links in comment section.

I saw that too. I've never had a problem with gluten, but it's true that the times I've tried taking the simple starches out of my diet I both look and feel better.

And yes, lots of interesting info about grains.

I'm still working on reading ... too many people in the house last night.

Not being a true celiac or having thyroid problems, but having tried Gluten Free ... my body loves dropping the gluten from the diet. Whether it is the cellular inflammation not happening or my innards just being happy to digest happily, I'm not sure.

I also take Lipitor and that has been known to decrease inflammation also ( a cool side effect) Have noticed that while dieting and Not taking lipitor it is harder to lose weight, but once I start back up on it, I do shed water so much easier ... maybe it's all in my head, maybe it's not eating gluten ...

Interesting on quinoa still being "like a gluten" It doesn't effect me personally like wheat flour or oatmeal.

Not only is the digestive process severely damaged, much of our satiety signaling is taken offline as well. We cannot properly digest our food, we are always “hungry,” and the very food we crave, refined grains and sugary junk, happens to be the cause of the problem.

Ugh - my #1 reason for staying away from baked goods, and why most of us ALWAYS have room for dessert!

And not everyone has problems w/grains :)

Can't wait till lunchtime so I can read the other links ...

Thanks Ileen!
