Would it be possible to only weight train 2X week and still have good results? I will soon be going into a lengthy trial (august) and time is going to be a big, big issue. Cardio is easy because I can run to the office or whatever, but to get to the gym is going to be a bit harder.

I know Julie does this and has had good results, but am curious on your thoughts.

If you're doing full body 2x a week, then that should be fine.

If you think about it, upper/lower splits only hit each muscle group 2x a week anyway (though probably with slightly greater volume than you'd do with full-body).
