Which exercises assist in adding caps to delts? I would imagine it is a move such as shoulder presses; is this right? Which other movements help w/ it?

Just build them up. There's no magic exercise.
Do some heavy work for them, 5x5, 4x6, something like that, maybe some heavy-explosive stuff in the 3-5x3 range or so.
Then follow up with higher-rep work in the 8-12 range for a few sets on a different exercise, something fluff.

This is what I was looking for--I guess I asked the wrong question. Thank you very much.
Is it muscle-builing. Should there be cals over mantainance?

The 'caps' are just your delts after they have gotten bigger, so yes that is building muscle.

Pretty sure that muscle is sensitive to andros as well....

yeah heavy o'h presses 5-6 rep superset with raises 10-12 works well.
