This may be old news for most, but I'm relatively new to LBC and have been recently looking for creative new recipes... who knew there was so much to be done with cauliflower?!!? Right now I've been using cauliflower and my vitamix to make some "whipped potatoes" as part of my on plan 1 cup fibrous veggies to go with Tilapia. It's delicious!

I also found a recipe for pizza crust! Really!? Has anyone tried this? Sounds pretty interesting....

Cauliflower Pizza Crust

1 cup cooked, mashed cauliflower
1 egg
1 cup mozzarella cheese
1 tsp oregano
2 tsp parsley

Preheat oven to 450 degrees.

Spray a cookie sheet with non-stick spray.

Drain the cauliflower real well after cooking.
In a medium bowl, combine cauliflower, egg and mozzarella.
Press evenly on the pan. Sprinkle evenly with oregano and parsley.

Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

Remove from oven and top with all your faves!!

i make the cauliflower tators a lot with GARLIC.. makes it spicy :yum:

i just use the whites, crispy as a base. I dont add anything 'into' them.

I was wondering the same thing about leaving out the cheese.... so it does work ok w/out the cheese??

how much egg/cauliflower to you use when you make the crispy "crust" without cheese? i think i want to give this a try.... :)

If was going to use callflower i'd likely try a cup of cauli and an eggwhite or two. xanthum gum might be useful to combine in this. (havent tried that)

what i was saying was just us eggwhite ONLY (no cauli) as the crust. Not quite the sme taste but you can play around with that too.

oooooh eggwhites ONLY as a crust! that's even easier! how do you make that? literally just egg whites in the pan? (is that the dumbest question ever?)

Yes,put your eggwhites in the skillet and cook it. I like to get it a bit crispy. Then put it into the oven (350-400deg) with toppings of choice and bake.

I'm pretty sure I have never in my life had cauliflower, unless I was like 4 and don't remember. :yucky: Does it taste like broccoli? :yucky:

live on the edge, try it. make it mashed cauliflower with garlic. Will taste spicy not veggie like.

:) Thanks Ileen! Definitely going to give this a try- I'm always up for new (and easy) ways to swtich things up and still stay on plan!! Any more great tips you have would be welcomed!! ;)

:yum: Ilean!!! Think that would work better than the caulflower crust ... which is tasty good too ;)

Nicole - Eat the Cauliflower! It's one of the only veggies my kids love ;)

The cauliflower pizza sounds wonderful, I love cauliflower and my husband is not eating wheat at the moment so great swap.

OMG! Thanks for bumping this!! I had seen a recipe using cauliflower and I think "garbanzo flour?" for pizza crust on FB like a week or so ago. I totally forgot about it!!! I want to try this!!! Although I still need to try the EW one again to see if I can get it crunchy still.

I tried this recipe the other day. It came from Kelly Rennie, a fitness model.

It turned out really good.

Egg Fried Califlower Rice

1/2 califlower grated
1tbl grass feed butter( i just used olive oil)
1/2 cup frozen peas
1 egg

combine all ingredients in skillet and brown.

Super easy and last night I added shrimp for my protein.
