Sunshine's Sweet N' Tangy Lemony Baked Oatmeal

Last night I measured out and combined my 3/4 Cup oats and 4 eggwhites. I kept the seasoning very simple and added just cinnamon and a splash of butter extract (that stuff's no joke! Im new to using it, and have learned a little goes a LONG way ). I combined it all and let it 'marinate' in my fridge overnight to really soak the flavor into the oats. Well, that was my intention anyway, but a nice 'happy accident' occured and my baked oatmeal turned out sooooooo moist.

Put mixture in bundt pan and bake in oven at 325 for 30 min.

I LOVE to cook, or rather baking especially - my weaknesses being baked goods and pastries. I made a cream cheese danish a while ago that called for homemade Lemon Icing and really wanted that. So, while my oatmeal cooked I combined splenda (usually calls for confectioners sugar) and Lemon juice. Gernerally its a LOT of sugar, and just a smidge of lemon juice. Im not big on using a whole lot of splenda so I just used 1 tbs splenda and 2 tsp lemon juice - it turned out a little more runny than icing.y, so I would reccomend 1 tbs to 1 tsp ratio. Drizzled that over the top of my finished oats, sprinkled a little splenda and cinnamon over the top (really, just for presentation LOL) and voiloia!

When my M1 called for Oats, egg whites and 1 serving of fruit I subbed pumpkin for that serving of fruit and made pumpkin pie oatmeal - uber delish!

40g Oats
6 egg whites
1 serving of pumpkin fruit - I think it was 3/4 cup but dont quote me, its been a while
1tbsp sfff carmel syrup
splenda to taste
dash of pumpkin spice or pumpkin spice capella drop
dash of cinnamon
1/4 tsp of baking soda


I basically ate a pumpkin pie daily - miss those days :):popcorn:

15 oz Canned Pumpkin

A friend of mine gave me a GIANT box of Washington peaches. Like 20lbs. So today my oats were very similar to Erik's except with peach instead of blueberries. Simple and so good.

I really like to add PB in my oats. It gets creamy and yummy, tastes like a PB oatmeal cookie.

Sunshine's Kaffinated Kahlua Slow Cooked Oats N' Eggs

(Mind you, I havent actually had a Kahlua in forever so...really this may just taste like buttery coffee :lol)

60g Oats
4 Eggwhites
Cinnamon to taste- whipped together and set in ziplock container in fridge overnight (May or may not be something special about this. I tell myself my oats cook up thicker after soaking all night... but I just like to have it ready to go so I dont have to spend time measuring in the a.m. ;) )

1 large sauce pan
Electric heat set on 4
2 Cups Coffee
Oats & EWs
1 tsp Butterscotch Flavor
Stir, stir, stir
Set heat to low and add lid
Curl Hair
Stir
Do Makeup
Wipe up spill over and keep lid off
Stir
When you acheive desired done.ness, put in bowl, add spray butter and splenda to taste!

Voila!

I liked it. Hadnt planned on it - just had a lot of extra coffee this a.m. since the bf went to work early. ;-) I probably couldve used more flavoring or more splenda. But I tell you what, I was fffffllllyyyying on a caffeine buzz!

I dont particularly care for PP in my oats as i'd rather the volume and enjoy separately...

You cant add if very hot. I often would stir in a wee bit of water to mix and then add.

I never thought I would like oats and yogourt together until I had both on a plan for breakie a while back.

Current favourite is oats, greek yogourt, in season peaches, a little bit of real maple syrup, and cinnamon. :drool:

I added coffee creamer to my first bowl of oats yesterday to add cals, flavor, and fat. It was YUMMY! Not sure if it is compliant though.

Subbing a little of your oats for cream of rice makes an awesome bowl of oats. I cook mine w tons of water like Ileen then pour into a bowl with half or all of my egg whites and microwave until creamy. Little Greek yogurt, lots of cinnamon, and walden farms maple syrup = huge creamy bowl of yummaliciousness. Sometimes I add chopped nuts and or/ banana

Nope, just make sure you stir mid microwave and take it out when it's creamy, not hard.

Just noticed posts on FB about cream of rice/wheat. It's been a while, but I used to eat cream of rice (or maybe wheat) cooked with egg whites and a sprinkle of Butter Buds. Might have to try it again, but I hate to give up my baked oatmeal and egg whites...decisions, decisions! :shrug:

Psyllium!!

My favorite these days i CoR because the oats sometimes bloat me.

We've been playing with the amts of water we can add.. and today, i use some Psyllium (is JUST fiber/gluten free) sprinkled on some deliberately watery CoR and it thickened it right up.

Bonus is any one with bathroom issue can use some extra fiber..

Ileen- I finally found the CoR and I like it!! It is a lot like grits just not so...gritty, lol-meaning it is smooth. It is bland so I am needing to figure out a way to flavor it. I like mine think. Maybe I can cook it long enough to make a pizza crust?!

I added AFTER cooking. Havent tried xanthum gum but i know it does thicken my greek yogurt just fine..

Im not sure you can get it pizza crusty........ but TRY :D You can do 'crust' with cauliflower tho.

Yum! So many things to try! I wonder what it would be like Asian.y..perhaps some soy sauce/ginger? WHo am I kidding..I will probably never give up my CoR with WF Syrup :yum: Oh! BTW, xanthum worked just fine! 1/4 tsp with the 3 cups water ratio - perfection! :thumb: Thanks!

CoR is the greatest discovery....OMG, I love it! I could eat it for breakfast and my PWO meal, everyday. Simple and delicious. I may have to try mixing my oats and eggwhites sound interesting.

oat bran 'blows up' like CoR as well. I havent made it in a while so not sure how far i can push it with the amt of water. Does better with adding psyllium to it too. Reg oats get 'gooey'

Hi :hi: There is a food calculator for subbing, but Im pretty sure its for clients only as it requires a log in. However, Ive heard that calorieking.com has a great database that many waitlisters use for subbing and such! :thumb:

I totally agree with you Erik EXCEPT you forgot egg whites. I absolutely look forward to my breakfast every morning. Cooked egg whites, cooked oatmeal with a dash of cinnamon, blueberries. Mixed all together and ENJOY! No need to bake for 45 mns or use sugar free sweeteners. Simple yet effective!!

CHERRY ALMOND BAKED OATMEAL (adapted from the recipe of Jenny Grothe)

1/2 c old fashioned oats
1 c water (or you can use part almond milk, or the cherry juice water)
1/4 t. baking powder
1/4 t. cinnamon
1/2 t. vanilla
1 t. almond extract (I like a touch more)
cherry extract (I like to add this now,too for more flavor)
2 T. nonfat cottage cheese
about 7 fresh tart cherries (I buy the Kroger brand can of tart cherries packed in water only. You can use the cherry water for your measured water)
stevia to taste

Mix together and bake 350 deg for about a 1/2 hr in a small baking dish. I always double the recipe and bake in a 9x9 pan sprayed with Pam. You could measure out your oat serving and double or triple it to make extra for a few days of oats. Optional would be chopped almonds added. Baked oats is sooooo yummy! But you could easily do this stove top or microwaved, too. Enjoy friends...yummy cherry almond oats :)

i just put my m1 in the oven :)

i got 2 ramekins and in one i put

20g oats
pinch baking powder
1/2 serve banana (33g)
pumpkin spice
sweetner
125ml water


and in the other i put
20g oats
pinch baking powder
apple pie capella drops
sweetner
125ml water
half serving blueberries (60g)


and in the morning ill mix my 4 e/w and 1 egg with sea salt, chilli and garlic and scramble it :D mmmmm

I don't know if any of you already do this, but oats or COR can be cooked in yummy prepared teas like gingerbread or sugar cookie for flavor. Mmm....

I never found the sugar cookie tea, but I know a lot of the girls here have it. I also have an earl grey chocolate berry tea I might try. I just have to do it on a day that I want caffeine..

Girl, I read this a long time ago.. well, I guess not that long ago.. anyways, I have been wanting to try it, but always put it off.. I bought butter extract and put in in my oats and OH MY! Its Fanfreakingtastic!

So Steph, Do you just make a normal cup of tea then use that as your water to cook the cereal with? Have you tried it with COR?

Yes I just make some strong tea and use it as my water. I haven't tried it with cream of rice, but I bet it's delish

Great idea! We have a raspberry tea I might try this with on Friday ...

I usually use leftover (or currently drinking) coffee in my brown rice farina ... a bit of almond milk, stevia in the raw - cook it up :yum:

Any 'recipes' for Cream of Wheat??? I usually bake my oats, with all sorts of yummy goodness. Just wondering if you all just cook the COW and add the fruits, flavorings after? And, do you slow cook them?

should be similar to COR or Oatbran.. has the same consistency. I avoid wheat so dont 'play' with it.

mix well, and put in the fridge covered.. I'm going to make this tomorrow morning for meal one! SQUEE! Pancakes! SO excited!

46g hodgsons oat bran
5 ew
4g vanilla pp
60 g pumpkin puree or 45g grated apple.
1/8 tsp baking powder
1-2 TBS water
Cinnamon and sf sweetener to taste
Mix together and let sit over night.. or not.. dunno if it makes a difference in outcome
Bake 325 50 minutes.

Ileen.. calm down, calm down.. I'll get a pic. :D They are gone now, but when I prep my foods I'll take a picie. I used a mini loaf pan, OR one of the pyrex circle baking bowls. The mini loaf was BUSTING at the seams! I get my mini loaf ceramic pans from Hobby Lobby, or pampered chef.

Brooke~ I used the xanthum when I made it with apple, but didn't really see the need to have to use it again, and probably wont with any other recipe in terms of using the Oat Bran. Making it with the Pumpkin just made them that much better.. bigger.

OH! Also I should add that when I make the batter at night, I add a little bit of water to it.. like maybe a TBS or two..

Update for those oat bran loaves I made above this post. Using the above fruits didn't work as well as the pumpkin. The pumpkin gave the "batter" more girth and it held together much better. Using the berries and apple was a good good idea I thought, except the oat bran settled on the bottom.. and the egg and fruit was on top.

Brooke, you're cracking me up! LOL the ones I just made with the pumpkin, I let them sit on the counter for a couple hours, then baked them.. I reduced heat to 325 and baked for close to an hour. Size of bakeware and oven may vary though. Enjoy! The are sooo guuud!

When my M1 called for Oats, egg whites and 1 serving of fruit I subbed pumpkin for that serving of fruit and made pumpkin pie oatmeal - uber delish!

40g Oats
6 egg whites
1 serving of pumpkin fruit - I think it was 3/4 cup but dont quote me, its been a while
1tbsp sfff carmel syrup
splenda to taste
dash of pumpkin spice or pumpkin spice capella drop
dash of cinnamon
1/4 tsp of baking soda

I don't know if any of you already do this, but oats or COR can be cooked in yummy prepared teas like gingerbread or sugar cookie for flavor. Mmm....

OMG...WHERE do you find gingerbread and sugarcookie flavored tea??? At least, what brand is it?

Well, I screwed it up and put it in the fridge last night cause of the EW and it DIDN'T RISE. So, now you know, you have to let it sit, or it is a flop, literally! LOL

I will try again this weekend, and with pumpkin, the banana was not flavorfull either.:shrug:

Girly., it was baked. I think it met the oatbran fluff up more.. hmmm, I wonder if micro would work? I'll have to try that. One serving of fruit for pumpkin is huge! :p

Bengal Celestial seasoning is the BEST tasting tea I've had yet! I made some last night and my whole house smelt good! First the kitchen, then the living room, then my bedroom.. MmmMMmmMM I saved some from last night to add to my GF Bobs red mill mighty taste hot cereal

Why can't I get my stuff to stay fluffly like that? Granted I didn't follow this exact recipe, but anytime I make something it grows in the oven, then as soon as I pull it out it deflates. What am i doing wrong? :scratch: Too much or not enough baking powder? Not cooking it long enough (though it's usually rubbery so I don't want to cook it longer)? Any experts out there have any idea?

Lori mine is not that fluffy either and it deflates after I take it out of the oven but it still tastes soooooooo good! This the pumpkin/oatbran is my new addiction--I've been eating it every day! And I love that its full of fiber ;)

I notice that if I dont bake mine long enough it deflates. How long do you let it sit before you stick it in the oven? When temp and time are you baking it at? I find that if I let the batter sit in the baking dish, on the counter for a few hours, then bake it, it rises much better. If I use all the egg whites on my plan, it deflates as well.. 5 egg whites is the most I use. I tried muffins yesterday by using 6 egg whites, those little guys deflated miserably! Also.. do you add salt? I notice that helps.

Yeah....I don't follow directions very well. :oops:
I don't let it sit very long - maybe 5-10 min. I think I did overnight once, but I added water that time for some reason so it was just gooey. I did it at 350 for about 30 min (I think). I just kept peeking at it to see if it looked ready. Sometimes I'll put it in my toaster oven at 350 but that never works well either. I use 3 or 4 ew and 1 whole egg. And no, I don't use salt.

I used to make pancakes out of my M1 ingredients too and they'd be fluffy, but not anymore.

I'll try again today - add salt, let it sit overnight and throw them in the oven in the morning and see what happens. Either way they're edible in the car so it works!
