If I am stir frying veggies with olive oil on medium heat, am I losing any nutritional value from the oil. I've read conflicting research. I just find the oil tastes much better when heated.

I don't think you're supposed to heat olive oil.
Put it on your food after it's cooked.

:huh: if this is true I have been doing this wrong for most of my life..I thought that was for like flax oil??

Flax oil. Definitely not.
I'm not 100% sure about olive oil, but I don't think so. If memory serves, it shouldn't be heated to high temperatures.
I think for cooking you're better off sticking with canola, safflower seed or sunflower seed oils.

Extra virgin olive oil has a low burning point. I would only use it on very low heat if you're worried about degrading it. I just use PAM olive oil spray when cooking at higher temps and use real olive oil for things like dressings.

:blink: :oops: I cook with olive oil all the time, I had no idea you should not heat it. I even bake with it. :shrug:

You're not going to have any health issues from cooking with it. Heat just degrades the Omegas. I do know that burning oil creates some sort of carcinogens, though. And EVO is pretty easy to burn.

I do, too. Just don't heat it too high when sauteeing etc.

All the cooking shows say that if you want to use high heat for something (like searing meat), use vegetable oil because it has a higher buring temp. Sometimes they mix veg oil with olive oil for stir frying.

I learned this lesson.
One Thanksgiving, I basted my turkey in olive oil and cooked it in one of those bags and we could not even try to make gravy. The olive oil gave the juices a rancid flavor. The temp in the bag was simply too high for the olive oil.
