View Full Version : Chicken Taco Soup

2T EVOO (i omitted this and used EVOO flavored Spray)
1 Medium Onion (Chopped)
2 Cloves Garlic
1 Can Chicken Broth (Reduced Salt)
1 Can Tomatoes (Diced) with Juice
1 Package Taco Seasoning
1-1.5 Lbs Chicken (Cubed)
¼ C Cilantro (Chopped)
½ Sm. Can Jalapeños
1 Lg Can Canelli Beans (any bean will work)
Hot Sauce (to taste)


In large pot sautee onions and garlic until tender. Add chicken and cook until no longer pink. Mix in remaining ingredients except the beans. Bring to boil. Reduce heat to medium. Add beans, simmer.

Top with Sour Cream, Cheese, Salsa – whatever.

Sounds good! Should add some green/red peppers, and sub. black beans! Yum-o!

peppers would be a great addition. i have tried black beans - makes the soup taste "heavy" - probably make it a good winter soup then..

I have made a version of this many times. It is REALLY good, especially when you are sick and tired of looking at that chicken breast. I omit the oil, and just throw it all into my crockpot. If the beans are already cooked though, add them about halfway through. I throw on a TA of ff sour cream.MMMMmmm
