Ingredients: 2 lbs ground beef
1/2 of a jalapeno
1 tomato
1/4 cup green chile
1/4 cup cubed squash
1/4 cup crushed Special K (9 carb kind)
2 eggs
1 chopped green onion
salt & pepper
*optional*
1/2 can tomato sauce for the top
chopped pickle(tried this on my 2nd meatloaf~ It was yummy)
How To Prepare: Preheat oven to 350.Mix everything together. Place in a greased cake pan.Baked for 40 minutes or until browned. Pour on tomato sauce. Bake for 30 more minutes.
This is so delicious! I was experimenting with all sorts of veggies to put in my meatloaf and this was the outcome. My non-low carb husband said it was the best meatloaf I have ever made, which is a huge compliment coming from him(doesn't like alot of meat). This was AWESOME cold the next day. I cut a good sized piece, placed it in a low carb torilla with a tablespoon of miracle whip(2 carbs) and it was heavenly! Hope you all enjoy this...I know I did! :D
