I love these! It's basically one serve of oatmeal in a cookie format, but it tastes so decadent!
BIG BREAKFAST COOKIE
Serves 1
1/3 cup rolled oats
1 tablespoon sultanas (golden raisins), plumped in microwave
1/3 cup skim milk powder
¼ cup no added sugar applesauce
¼ teaspoon cinnamon
¼ teaspoon baking powder
sugar substitute equal to 2 teaspoons sugar
Preheat oven to 180ºC/350ºF. Line a cookie sheet with baking paper. Mix all ingredients together and spoon a large mound on cookie sheet. Bake for 15-20 min, until golden brown on edges.
Nutritional Info:
Calories: 235
Carbs: 45.7g
Protein: 4.1g
Fat: 4.2g
You can, of course, substitute a tablespoon of any chopped dried fruit, or unsweetened coconut flakes, or chopped nuts for the sultanas. Walnuts or pecans would be good.

what about adding protein powder??
I was thinking about replacing the skim milk with protein powder, but pp tends to make baked goods really dry - it would probably ruin the texture. :yucky:

Not if you use soy. It cooks like flour.

how do you plump raisins in the microwave?
Just put them in a heatproof jug with a little water, nuke them for a minute or so, then drain them. Makes them plump and juicy.

I have and it's delicious. I've also made this using the recipe provided and adding in 1 heaping TB of peanut butter. Either way is really good.

you are a genius. i just made this but i substituted skim milk pwder for pro pwder and it worked fine. also added 1/2 raisins and 1/2 cranberries! YUM! eating it hot out of the oven!!!

Who said "large amount"? :confused:
If you were referring to the "large mound" instruction in the recipe, the nutritional info is for the whole recipe - ie one large cookie. :)

Ok, I just made these with a modified recipe and they're very very good.
I subbed 3/4 of a scoop of vanilla whey protein powder for the powdered milk, and added 1/2 tsp of canola oil to help with the dryness. The only other thing I think would help is a little salt.
Otherwise, they're amazing and I think I've just solved my boring breakfast problem. Plus, they're surprisingly filling!

Haha! Sorry.
Of egg whites. I put in (for 6x the recipe) about 3/4 tsp of salt. You might want to taste the batter to make sure it's to your liking.

i'd treat them like normal baked goods..... i'd imagine they'd get nasty after about a week without freezing (not that they'd last anywhere near that long with me).
i don't see why they wouldn't freeze well! just make sure you wrap them up so they don't stick together.

I think I might make this tonight. It'd make a great quick breakfast with a protein shake!

they're soooo good for breakfast. surprisingly filling. i just made a batch with pumpkin instead of applesauce and they're pretty darn good.
ok, i have to stop talking about these now.

Re the freezing - they do freeze well, but they're better fresh. I make mine the day before and once it's cool, pop it in a box and store it in the fridge overnight. :drool:

I made these for the first time this weekend. YUM!! I think I could just eat this out of the bowl without baking.
I swapped the raisins with part of a ripe banana. Hubby thought I was making banana bread b/c it smelled soooo good.
Quick question, what will happen if I leave out the apple sauce? I'd like the banana flavor to come through a little more.

I left out the applesauce too because I didn't have it on hand when I made it. Makes it a bit dry, but it still works :)
I made this with:
1/2 cup oats
1/2 scoop PP (used dymatize vanilla isopure)
1 eggwhite
20g blueberries
8g blanched nuts (chopped in the magic bullet)
1/4 teaspoon cinnamon
1/4 teaspoon baking powder
2 teaspoons splenda
Couple of tablespoons of water
Mashed it all up then put in the oven and at about 15mins, it was nice & brown. It was pretty good :thumb:

I made another one lastnight. I left the applesauce out, but it was still moist from the bananas and 1 Tbsp skim milk.
159 cals
2g fat
32g carbs
5g protien
Really had a nice banana bread flavor. I am going to add some butter beads and maybe some chopped nuts. :drool:

you can use protein powder with this too- we have alot of these in our cookbook! (www.formerfatgirlfitness.com) There are recipes with protein powder, oats, raisins, goji berries too! There is a crunchy oatmeal raisin cookie that is as close to homeade as you can get!
