I made this up earlier this week, and I have been eating it every day.
I have an abundance of tomatoes in my garden and wondering how I am going to eat all of them, now I am worried that I won't have them for much longer!
2 1/2 oz ground buffalo, cooked
15 cherry tomatoes
85g chopped spinach (if using frozen, 5 nuggets)
1 tsp olive oil
2 cloved of garlic, chopped
salt and pepper to taste
1 tsp parmasean cheese
Heat olive oil in sauce pan, add tomatoes and garlic, and cook on med/low. Add spinach and cooked buffalo. Cook on medium until heated through. Add salt and pepper to taste. Top with parmasean.
Here's a pic,

I used a combination of yellow and cherry tomatoes, cuz that is what I had.

You can go here http://www.nutritiondata.com/ to figure out the macros for recipes pretty easily, in case you didn't already know that :) I use it a lot.

pretty much like cow. if nobody told you that you were eating bison you'd probably assume is was lean ground sirloin.

That dish looks absolutely delicious! Now I just have to find a place that sells buffalo in my area. I've never seen it in the grocery store but I have seen buffalo farms close to home.

I find buffalo has more flavour then beef. A little peppery too.
I buy mine from the local butcher, but I have also seen buffalo patties in the freezer section , but I find the butcher cheaper.

How much does it cost?
I looked around at the stores here, and the only buffalo/bison I could find were frozen steaks. $12 for 12 oz. Is that the normal price? About double the price of beef?

I picked some up from the farmers market not that long ago, I paid $4.50 for a pound of ground. I believe that is a little more then what I pay at the butcher.
It is more expensive, but well worth it IMO. I far prefer it over ground beef, and it is WAAAAYYY leaner too. My new staples in my diet at chicken breast, turkey breast, salmon and buffalo.

But I also don't see any reason why you couldn't make this with lean ground beef, chicken or turkey..... I just happened to use bison.
