I will be taking a 10 hour train ride tomarrow.
I want to pack my cooler with all of my meals- I will have no access to a microwave or fridge. I just wanted some ideas- I never ate my chicken and rice cold ;)
Any other way to prepare them or other cold ideas?

I always eat it cold. I usually freeze my chicken and rice or whatever I'm eating, throw it in my insulated lunch bag and by the time I need to eat it it's no longer frozen. I usually just eat it right out of the baggie B)

Um...I don't eat frozen veggies often, but definitely not cold...if I have to go somewhere and bring my food...I just make sure it's raw veggies.

I like frozen sugar snap peas, thawed and cold. All thawed cold veggies taste great with olive oil mixed with a little balsamic vinegar.
Tuna packages instead of cans are convenient. Just don't forget a spoon or fork. I always make that mistake.

I dont like meat reheated, so another vote for eating it cold or room temp. Just put some ice packs in there so things dont go sour.
I love green beans raw as well as some other veggies. Unfortunately for me, being hypoThyroid, most of them have to be cooked.
Really you can take anything with you. I have some of those great thermos insulated jars, that also things like soup and stews hot as well.

Soy sauce on cold chicken and rice is really good... I pretend it's sushi :p

Yea, I went overboard with soy sauce on EVERYTHING. I loved it. Then Thunder took it out of my eating plan. Rats! Something about it causing an insulin response even though it shouldn't.

crucifious veggies arent supposed to be eaten raw because they can interfer with the absorption of your thyroid medication.
NOTE: not all these affect everyone in the same way. And a sm portion once in a while probably wont have any ill effects on most.
Google vegetables and thyroid many more sites and info comes up. Www.thryoid.about.com is a great site for info.

That only listed a few veggies.
Weird. I've never had any issues with that at all.. and I eat almost all of my veggies raw. I've only increased my thyroid med once in 8 years (and the adjustment was nearly neglegible). I guess that doesn't affect me. I eat TONS of veggies raw every day and always have.
Interesting link. I wonder my my numerous docs over the years never warned me about this? They did mention limiting soy and broccoli, but that's it.
Thanks for the link.
