View Full Version : Perfect Blueberry Waffles

After messing with quantities in search for the perfect texture and taste, I've finally perfected a recipe for oatmeal blueberry waffles!
1/2 c quick cook oats, ground
1/4 fat free cottage cheese
1/2 c egg white
1 packet Splenda
1 tsp baking soda
2 Tbsp ground flax seed
1/4 c blueberries
Spray the waffle iron liberally with non stick spray (I use Mazola Pure Butter flavor)
This should make two good size round waffles.
Top with spray butter and 1/4 c sugar free syrup.
Enjoy!!

I make mine similar
eggwhites whipped w/stick blender
stir in oats, blueberries, cinn and Swtner (i dont add any)
Cook in nonstick skillet sprayed with pam or in a waffle iron
Sometimes a added a hint of bl berry extract (all natural)

I wish I would've read this before I made my blueberry pancakes :dry: I thought I'd get 'creative' and throw in some blueberries to my protein pancakes and it was a flop. Literally. Somehow, the blueberries kept them from cooking evenly..I'm gonna try the waffles next time. Less work too :D
on a side note: I used brown sugar Splenda rather than the regular, and they have an awesome taste dispite the fact that they're ugly!! :clap:

Bubblicious - I've found that if you halve the blueberries, the pancakes cook a lot better. It takes more time of course, but at least you don't have to scrape burnt bits of blueberry off your pan. Not sure if it would be such a problem with waffles.

Yes, the blueberries can be problematic if you aren't careful. Plenty of Pam on the pan or waffle iron is essential when using the blueberries. For frozen berries, I recommend trying to use all uniform size, the smaller the better. You can also pour your batter and then place the blueberries stragetically on the top of the batter. When it's practical, fresh blueberries seem to work better for me.
Also, I made the waffles this morning without the berries and they were still AMAZING!!
