I think I feel in love with Pumpkin Pie... :oops:

Do you have a recipe for a somewhat clean Pumpkie Pie?
I prefer the real crust over graham cracks and thought I could replace any butter/ fat with applesauce and sugar/ honey with Splenda or let that fall by the wayside.

I dont know a recipe, but just wanted to say that substituting apple sauce for the butter works GREAT! And SO much better for you!

Ingredients:
Crust
1.5 cup Oats (either quick oats, or old fashioned; crushed cereal such as Corn Flakes or Wheaties could also be used [4.5 cups cereal about = 1.5 cups crushed]; the oats have slightly less cal., more fat, more fiber, less carbs than the cereal)
4 Tb Frozen apple juice concentrate

Filling
1 can (1.75 cup) Pumpkin
4 Egg whites
1 can (12 oz) Fat-free evaporated milk
1 cup Splenda
1.5 tsp Pumpkin pie spice
.5 tsp Salt

Directions:
1. Preheat oven to 350 degrees. Mix crust ingredients. Spread crust evenly along inside of 9-in pie crust baking tin. Bake crust for 5 min. Let cool.
2. Mix Splenda, PP spice, salt in small bowl
3. In large bowl, mix egg whites, pumpkin, and splenda-spice mix. Gradually stir in evap. milk
4. Pour filling into crust
5. Preheat oven to 425 degrees. Bake pie for 15 min. Reduce temp to 350 deg. Bake for 40-50 min, or until knife inserted in center comes out clean.
