View Full Version : Apple Pie/Apple Crisp Oatmeal

So, I was having a massive craving for apple crisp or apple pie. This is what I did.

I peeled and sliced a couple green apples. Dumped them in a small crock pot with Splenda, apple pie spice, cinnamon, couple drops vanilla extract, a tbsp Smart balance spread (omegas.. and buttery), a little water, and just a few crushed walnuts. I let it cook a few hours on very low until it was warm and gooey. Then I dumped some rolled oats into it. Mix, scoop into bowl, and eat. (It made about 5 servings.. and next time I'll measure everything so I can get the breakdown)

It was a little bit of heaven. I put 1/2 tsp brown sugar on top.

Not the cleanest meal ever, but beat the hell out of apple pie on the "clean" scale and was so freaking good. (And I had a scoop of protein powder in water on the side.. gotta have the protein!)

Were the oats dry or cooked when you put them in the pot?

I just topped it with a tiny bit of real brown sugar. I didn't mean to.. it just sort of jumped on my spoon and I was like, "What the heck? Why not?"

I understand completely. I tell my hubby all the time that these things happen.

"I was walking through the store and it just hopped in the cart. It was easier to just buy it than to hafta walk it all the way back to the shelf, right?" :huh: :lol:

Berardi has an awesome oatmeal pie from his Gourmet Nutrition book (excellent cookbook by the way) . Here is a modified version he has on his website.

Baked Apple-Cinnamon Oatmeal

If you’re in the mood for a hearty meal to feed that insatiable P+C demon inside of you, this one might just appease the beast.

Ingredients:

3 cups old fashioned oats
1 cup oat bran
1 large apple, chopped (I prefer Macintosh)
4 scoops vanilla or strawberry protein powder
1 tsp salt
2 tsp cinnamon
*1/2 cup pitted dates, chopped (the book version doesnt have this)
4 cups water
1 tsp vanilla extract

Instructions:

Combine dry ingredients in a bowl and mix well. In a separate container combine water and vanilla. Combine all ingredients, stirring gently. Pour into 8" x 8" baking dish, coated with cooking spray. Bake at 350 degrees F for 35 minutes, or until the liquid has been absorbed and the oatmeal is tender. Over baking will result in dry oatmeal.

If you really want to make it special, put it in a bowl and pour a little milk over it. The two go hand in hand.

Makes 4 servings

Macronutrient Profile, per serving:

k/cal: 520
Fat (g): 9 (2s, 3m, 4p)
Carbs: 85 (15 fiber)
Protein: 35

Pandora, approx how much oats?

Do you think I could cook the apple mixture in a saucepan? I surely don't have the patience for a crock pot when it's that TOTM!

Ileen - what is the texture like on the Baked Apple-Cinnamon Oatmeal? Is it like regular oatmeal? Or is it more like a cake where you can slice it and reheat it?

I'd say in between oatmeal and cake. Once sliced, the piece stays solid. You can adjust the liquid for consistancy.

It can be reheated :)

there is.. it's splenda and reg sugar mixed. in.

you can make brown sug with splenda by adding a smidge of molasses. Might not be exactly the same. the recipe for substitions when you dont have reg br sug. is 1 cup sugar (reg) w/ 2tb molasses.

havent tried it though.

This is sooo good! I made it a few days ago and am still enjoying a piece each day. It's so filling and homey/cozy/comforting. I cut mine into 9 slices.

I had a similar craving this weekend and this is what I did. I took a 1/4 cup oatmeal and 1/2 cup of water and cooked in the microwave for 1:30. While that was cooking I cut an apple into small pieces then added cinnamon, splenda and the cut up apples to the oatmeal (sprinkling a little brown sugar splenda on top) and microwaved it again for 30 seconds. Stir and eat! I thought it was really good and curbed my craving! :drool:
