I use the same veggies most of the time.
Usually consists of
-roasted brussles sprouts w/ sea salt (thanks Cindy!!)
-onions/mushrooms sauteed in ff beef broth, sea salt and pepper
-raw cucumber w/ salt
-tomatoes on anything

I need to expand my horizons. How do you guys prepare your veggies?
Any and all recipes!
I just bought zucchini, broc/caul. combo, and more mushrooms. Oh, and green peppers. (I rarely buy these, usually red)

I guess I am boring but I usually make a huge salad with spinach, mushrooms, carrot, broccoli, cauliflower, cucumber, red onion, red pepper, blueberries, and walnuts. I add EVOO and apple cider vinegar (or red wine or balsamic).
Sooo good. I just got done eating this.

I'm currently PSMFing. Breakfast has been

'quiche'
5 egg whites
1/2 cup ff cc
1 oz ff cheddar
green, red, yellow and orange peppers
onions
1/8 tsp cream of tartar

preheat oven to 350 degrees-- mix it all up; toss it in a baking dish thats sprayed and bake for about 15-20 mins.

You know what Blondell, I make something very similar. Except, I was using 1 yolk to the whites. How do you get it non-rubbery w/ only whites?

And imadshoney (what is your name?) that sounds delicious!! I haven't made alot of salads lately. I don't like iceburg, and the spinach was recalled for a long time. Actually, I think it's back now.:thumb:

I generally just roast them with different spices.

Eggplant, summer squash, fennel bulb, mushrooms, green/red/yellow peppers, broccoli, cauliflower, celery, asparagus, etc...

Salads are good too. Love spinach, cucumber, radishes, water chestnuts...

I put bell peppers and spinach into omelets all the time. Really easy way to squeeze some vegetables in. Tomatoes are good in there, too, and onions (green or white).

I can only stomach caulflower and broccoli cooked-- usually steamed or stir fried. I swear that eating them raw does a number on my tummy, plus I hate how they taste raw.

What about green beans? Those are one of my favourite vegetables. They are GREAT with slivered almonds (toast the almonds lightly in a pan before adding).

I'm on a cabbage kick right now... steamed, sauteed, roasted, baked, you name it. Asparagus, swiss chard, zucchini, broccoli.... all good roasted on their own.

OOhhhhh, I think I'll roast my zucchini too. What seasonings do you use for zucchini? I usually grill it, but not now.

I use my George Foreman to grill it in the wintertime. Seasonings: seasoned salt or garlic salt or Frank's Red Hot Sauce or wasabi powder or lemon juice w/yeast flakes or any seasoning mix like lemon/herb, italian, etc.

I guess I'm a bit odd with this, but I do most of my fibrous veggies raw. Broccoli, cauliflower, cabbage. Those are my faves. But I also do a quick steam on those for things like stir fry. Throw them in a pretty hot wok or pan, squirt some water on them so it steams up real quick. Cover for about 2 minutes and viola! Yummy steamed veggies. And if I just make some veggies like that, not in a full stir fry kind of thing, I put a dash of Molly McButter on them.

When I do cook them, I don't cook them to where they're soft or soggy. You lose a lot of nutrients like that. So they're more, al dente I guess would be the term. Softened up a little, but still a little crunch to them.

I throw my veggies into omlets daily, a lot raw with meals(this includes salads but I use spinach base rather than lettuce for more nutrients), quickly stirfried or I make a HUGE soup in the crockpot with veges and chicken stock and spices.

with the brussels sprouts, I just put em at 350 and watch them brown- 15-20 mins maybe? I'm sorta like rachael ray like that when I cook... I rarely measure too. ;)

I do 450 and roast for 30-45 minutes. I like them pretty brown/crispy on the outside though.:shrug:

on topic.. I am really into sauteed cabbage these days too. I use a little butter, and some garlic pepper, and a touch of vinegar. oh my it's good.
I also like roasted brusslesprouts, I like them roasted at a higher temp too, makes 'em nice a crispy.
My DH teases me because I am always doing the pepper/onion mixture too.

I also feel I need to expand my horizans a little bit, sometimes I have good intentions, and then just stick w/ my usual.:shrug:

mostly I am a salad girl, easy.

That cabbage idea sounds good.

I also saute alot of sliced onions/mushrooms in a lil bit of water and TA. of onion soup mix.
Then I throw it into a big tupperware container and just add it to my meals as I go along.

I like a little fresh garlic added in the last few minutes, and salt and fresh pepper. Stir in your CC and add a little freshly grated parmesean cheese on top. Kind of halushki without he noodles, huh?

I have really gotten into boiling/steaming greens and then adding pepper vinegar (and also a pickled pepper) on them. YUM!!

Steamed, microwaved or sauteed spinach, with just a touch of soy sauce and topped with some toasted sesame seeds is one of my favorites.
