thanks in advance!
I wanted to make some chili tomorrow night (preferably 2hr cook time or less) and serve leftover to my boyfriend on Tues evening w/ fresh cornbread muffins.....
prefer a recipe with only 1 can of beans....he hates kidney beans..
a spicy recipe would work well too

Otherwise, check out this recipe (http://www.epicurious.com/recipes/recipe_views/views/1201) if you want something that isn't clean. I've made it a few times and people always LOVE it! PS I suggest a can of Guiness for the beer!

This recipe is awesome! :cheat: You can add chili powder/pepper to adjust spiceyness (is that a word? :shrug: )
Note: I've never made it with the adobo sauce because I can never find it in the store.. but it's a great recipe.. and pretty clean?!
1 tablespoon olive oil
1 onion, diced (1 cup)
1 red bell pepper, diced (1 cup)
2 carrots, diced (1/2 cup)
2 teaspoons ground cumin
1 pound extra-lean ground beef (90 percent lean)
1 (28-ounce) can crushed tomatoes
2 cups water
1 chipotle chile in adobo sauce, seeded and minced
2 teaspoons adobo sauce from the can of chipotles
1/2 teaspoon dried oregano
Salt and freshly ground black pepper
1 (15.5-ounce) can black beans, drained and rinsed
1 (15.5-ounce) can kidney beans, drained and rinsed
1 (15.5-ounce) can pinto beans, drained and rinsed
Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Cook, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and continue cooking, partially covered, 20 minutes longer. Season, to taste, with salt and pepper

Here's his chili recipe...which is great.
Take 6 pounds of ground turkey and brown it and throw it in a big pot. throw six pounds of diced tomatoes in the same pot. drain about 6 pounds of beans and throw it in a big pot.
Take two bottles of high quality bbq sauce and throw it in said pot. Jack Daniel's, sweet baby ray's etc.
Throw in hot peppers to taste. You need to experiment with a few bathces here. I use about ten dried hot chiles. The small type. Jabeneros would be to hot for most, but one might do the trick in a batch this size. Be warned however.
3-5 shots of tequila or jack or other whiskiey. Maybe rum or even jager. I never tried jager, but mgiht this weekend. Beer works, but keep it to about three bottles . It adds liquid, so you need to cook it off more.
A clove or two of diced garlic, a medium to large diced onion.
about ten slices of cheese to help thicken. Bring pot to a boil and stir so it doesn't stick. I do this for two to three hours. Let it on low over night, and you are a chili god the next day.

Do you have a crock pot? Usually what I do is brown some lean ground beef or turkey with onions, add in a packet of taco seasoning, then put it in the crock pot with a can of red beans or kidney beans or black beans, a can or two of chopped tomatoes and salsa and then I just cook in crock pot all day. It's easy and yummy!

mine is SUPER easy.
1 lb browned x-lean ground turkey
add one can Rotel chili fixins (or any canned diced tomato with chili spices)
add one can beans (black or kidney)
add one packet chili seasoning. (I have found a low sodium one that's good, some generic brand)
simmer for at least 10 mins, up to all day if you really wanted to.

This looks good to me. I like the 3 different kinds of beans as well as adding the carrots and red pepper. I think I will try this one. :nod:

Brown either lean beef, buffalo or chicken
1 diced onion
3 cloves garlic
Toss into crock pot with:
2 TBSP chilli powder
1 red pepper
1 green pepper
1 diced tomato
1 can kidney beans
1 can pinto beans
1 can diced or plum tomatos
I add either chopped jalepenos or a cup of salsa but that makes it really spicy. Also you can buy canned tomatos w/ chili seasoning and canned beans (kidney & pinto) mixed w/ chili seasoning. Really good!

This looks good to me. I like the 3 different kinds of beans as well as adding the carrots and red pepper. I think I will try this one. :nod:

Yep, a little brown sugar cuts the acidity of the tomatoes I think. I like to add a little cocoa or unsweetened chocolate to it too.

Forgot about this....
1.5 pounds ground beef or buffalo
1.5 pounds sirloin tips
2 – 14oz. cans of crushed tomatoes
1-2 cans, 14oz can of kidney beans
1 big ass white onion
3-4 habeneros
3-4 jalapenos
2 Cloves Garlic
Salt – to taste
Pepper – to taste
Ground Cumin – to taste
Chili Powder – a bunch
3 Bay Leaves
Chipotle Tobasco Sauce
Habanero Tobasco Sauce
12 oz. Sam Adams or similar beer
Put salt, pepper & cumin on the beef. Brown it. Toss it in a big ass pot. Chop the garlic and onions sauté them. Throw them in the big ass pot with the meat. Add the beans, tomatoes, chili powder, bay leaves. Add more cumin, salt and pepper if you feel like it. Maybe even some curry powder. Chop the habaneros and jalapenos and toss them in too. Mash it all up and bring it to a boil. Add the beer. Bring to a boil again. Chuck in some habanero sauce (unless you’re a wuss) and about half a bottle of chipotle sauce. Bring the heat down. Keep stirring occasionally for several hours on low heat.
I really have no idea how to cook, but when I make people seem to love it. It’s hot, so if you don’t like hot food you may want to omit the habanero sauce and chilies. I also could be forgetting some minor ingredients, I forget.

Brown 1# lean ground beef or Turkey
While meat is draining, throw the following spices in the pan for a quick frying:
2 TBSP Chili Powder (at least)
1 Tsp Cumin
1/2 tsp garlic powder
Red Pepper flakes
Black Pepper
Throw meat back in and add the following:
2 cans Diced tomatoes (you can replace one with Rotel)
1 drained can of kidney beans
a small amount of water or beef stock (organic please)
Salt to taste
Simmer about 45 min or until thickened to your taste.
Serve with cornbread :D

But I substitute 2/3 cup beans raw instead of a can then boil them for half an hour.
aside from the buffalo.....my way...fairly cheap.
