I decided a thread for chicken marinades might be necessary. Feel free to post your favorite recipes.
*quick marinate in Balsamic Vinegar for 30 or so minutes - sprinkle w/ Italian seasoning - cook for 20-30 minutes
*Parvez Chicken (re Zaheer Parvez) Marinade
The only "nonclean" item in this recipe is the low/nonfat plain yogurt - I figure since its just marinating, the yogurt isn't THAT bad, just don't eat it everyday on Erik's plan
4 half breasts of chicken
Yogurt, plain lowfat, 8 oz
Salt 1tsp
Pepper 1tsp
Chili powder 1tsp
Cayenne pepper 1tsp
Ginger 1tsp
Vinegar (apple cider) 1tsp
marinade for 1 h – longer is better
grill or oven broil (can use oil or spray nonstick spray on grill surface so chicken won't stick)
THIS IS THE BEST CHICKEN EVER!!! we do it alot in the summer time w/ the grill! We grilled it last night for the superbowl - a hit everytime.

Not necessarily marinades, but you can add it to some oil and apple cider vinegar for a marinade...
BABY BAM SPICE MIX
3 tbsp paprika
2 tbsp celtic sea salt (less if you wish)
2 tbsp parsley
2 tsp onion powder
2 tsp garlic powder
1 tsp black pepper
1 tsp basil
1 tsp thyme
1/2 tsp celery salt
* can add 1/4 tsp cayenne for extra zip
--- Makes 3/4 cup
RUSTIC RUB SPICE BLEND This one is the most popular...makes a lot!
8 tbsp paprika
3 tbsp cayenne
5 tbsp ground pepper (fresh)
6 tbsp garlic powder
3 tbsp onion powder
6 tbsp celtic sea salt (adjust to taste)
2 1/2 tbsp oregano
2 1/2 tbsp thyme
--- Makes 2 cups
POULTRY SEASONING
1 tsp thyme
1 tsp sage
1 tbsp celtic sea salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tbsp paprika
MEXICAN SEASONING
1 tbsp oregano
1 tbsp ground chili peppers
1 tbsp cumin
1 tbsp corriander
1 tbsp paprika
1 tsp onion powder
1 tsp garlic powder
TACO SEASONING
2 tsp dried onion minced
1 tsp celtic sea salt
1 tsp chili powder
1/2 tsp cornstarch or tapioca starch
1/2 tsp crushed dried red pepper
1/2 tsp dried minced garlic
1/4 tsp dried oregano
1/2 tsp ground cumin
MAGIC DUST
1/2 cup paprika
1/4 cup celtic sea salt
2 tbsp mustard powder
1/4 cup chili powder
1/4 cup ground cumin
2 tbsp black pepper
1/4 cup garlic powder
2 tbsp cayenne
--- Makes a ton...

These look good! I love rubs and use them often for chicken and flank.

What is the difference between celtic sea salt and regular sea salt?
Regular sea salt can still be processed. Celtic has all minerals in tact...I will write a little something on it later :) When you buy Celtic you will find that it is still kinda wet.
A good brand of Celtic Sea Salt is Sel Marin by Le Paludier (it doesn't say Celtic on it)

The ones I posted I have in my cupboard ready to use. I do them up on a day that I have extra time, and store them. Suggested.

If you grill you chicken, like outdoors on a grill, will most of the oil you soaked it in (if you use and olive oil in your marinade, like I) cook off?
I've tried everything to not make my chicken so bland without making it too salty, but last night I took Newmans Lite Balsamic salad dressing poured it in a bowl and marinaded my chicken for about an hour. I just ate it now, and OMG SOOO GOOD!! This had to be bad or something, cause it was alomost too good! How much of the dressing is actually absorbed into the chicken, does anyone know? Or is this still pretty clean?

this is not clean but it's a great change if you are eating lots of chicken -HOISIN -its' basiclally chinese bbq sauce-it is similar to teryaki

Juice of two lemons
2 tbsp olive oil
4-6 cloves minced garlic
Handful of chopped fresh oregano
Sea salt to taste
Mix it all together and rub into chicken breasts or chicken thighs. Marinate for at least 15 minutes.
Grill.
Goes great with this sauce:
Small container of Fat Free Greek yogurt
4-6 cloves minced garlic
Juice of half a lemon
Salt to taste
Very garlicky and very delicious! :)
