Really good recipe... Easy. No cooking.
I N G R E D I E N T S
1 pound fresh red snapper fillets
3/4 cup freshly squeezed lime juice
1 large tomato, cored, seeded, diced
1 small red onion, finely diced
2 bunches cilantro leaves, roughly chopped, about 1 cup
1/2 cup bottled clam juice
2 serrano chiles, stemmed, thinly sliced into circles
1 1/2 teaspoons salt
I N S T R U C T I O N S
Cut red snapper into 1/2-inch cubes and place in glass or ceramic dish. Toss with 1/2 cup of lime juice. Cover and marinate in refrigerator 15 minutes. Drain and discard lime juice.
Transfer fish to medium bowl. Stir in remaining 1/4 cup lime juice, tomato, onion, cilantro, clam juice, chiles, and salt. Chill at least an hour, or up to 1 day, for flavors to blend.
Serve in tall chilled goblets with spears of romaine lettuce and/or tortilla chips, or in soup bowls lined with the lettuce leaves.

ummm... probably a dumb question. But is the fish ever cooked?
NO it cooks in the lime juice, it's awesome :clap:

It cures it in a way. The fish doesn't taste raw. Hard to explain but really :yum:
I love tuna ceviche - but I've never made it on my own. I'll have to give this a go. :yum:

The acid in the limes actually does cook the fish.
Have you ever marinated chicken in a acidic liquid? The chicken turns white on the outside... It's basically "cooked". NOT that you can do this with poultry!!!

You did fine explaining it, Ana. If my boyfriend were here right now he could have given us the actual description of the chemical reaction and what it's called! Hahahaha!

All I know is that it's awesome really that's all I know. My peruvian friend makes it for me all the time, in fact that's all I have when I go to her house, she said I'm :banned: unless I ask for something else :shrug:

It denatures the proteins - just like cooking denatures the proteins. It doesn't do it in the same way, but it's why the texture is different.
I want some now.

How do you know if it is done "cooking"? Or will it look like how baked fish looks when cooked?

It looks just like cooked fish. You know how it's kind of translucent when it's raw? It goes white when it's done.
