8 cups oats
1 cup pecans
½ cup sunflower seeds
½ cup orange juice
4 tblsp. Molasses
2/3 cup honey
1 cup dried cranberries (or raisins)
Preheat oven to 325 degrees. Spread oats in a large, deep pan and toast for aprox. 8 minutes, mixing them every few minutes. Transfer to a large mixing bowl. Add pecans and sunflower seeds.
In a saucepan, heat orange juice, molasses, and honey. Stir and mix over low heat. After thoroughly warmed, add to oats mixture. Spread in roasting pan. Bake for aprox. 25 minutes. Add cranberries and serve.
(serves 20)
Nutritional Value per Serving:
250 cals
7g. Protein
37g Carbs
9g Fat
You could leave out the pecans if you want to lower the fat.

I wonder if I could sub something for the pecans? SO is allergic to nuts (but sunflower seeds are okay). More oatmeal? Something to make up for the 1 cup volume.

That saltine cracker/toffee candy. Here's one recipe for it:
INGREDIENTS
4 ounces saltine crackers - (just line a baking sheet with crackers- not all the way to the edge though)
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
3/4 cup chopped pecans (optional- I've used chopped walnuts)
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C).
Line cookie sheet with saltine crackers in single layer.
In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread to cover crackers completely.
Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.
