View Full Version : Broccoli "rice" casserole

Ingredients: 1 bag frozen broccoli (12 oz)
1 bag frozen cauliflower (12 oz)
8 oz softened cream cheese
8 oz (or more) grated cheddar
Salt and pepper to taste



How To Prepare: Steam broccoli and cauliflower until very tender. (Since I no longer use it for pasta, I use my spaghetti pot with strainer insert for this, as I think it keeps veggies from getting too wet). Drain veggies and add to food processor with cheeses, salt and pepper and process until combined.


I may try adding some sauteed onion and garlic to this to deepen the flavor. I have also done this with Romano cheese instead of cheddar - it's a little strong for me (sort of stinky cheese!) but still good.
Number of Servings: 6 (in my house)
Preparation Time: 25 min (steaming veggies from frozen)
