Ingredients: 1-2 lbs mustard greens
5 slices ginger, julienned
3 T lard (or other oil)
salt to taste

How To Prepare: Chop and wash the greens in a large bowl. Heat lard in wok until hot. Add ginger and 1/4 t. salt, stir until fragrant. Add greens and stir fry until wilted. Taste liquid in bottom of wok and adjust salt to liking. If it's too dry add a little water. Stir fry for about 10 mintues (or more or less depending on how crunchy/soft you like your greens).
Note: This recipe will work for any greens. You can also substitute the ginger for garlic for a different flavor. I use about 8 cloves of garlic chopped coarsly. Adjust cook time according to greens.
