I had bought some of this, as I was going to make some recipes from Gourmet Nutrition, but never got around to making anything yet. What exactly is this stuff? What do I do with it? What does it taste like? Is this a good carb choice?

i love quinoa! i don't know that this goes along with your diet but i just boil it in water (2 parts water to 1 part quinoa i think but check to be sure). i also add in a chicken cube. when it is done i throw on some tomatoes, green peppers and sweet peas along with some salsa ... yum! it's great plain too!

some people don't like the taste so much but i like it. i'm not sure how i'd describe the taste but my sister described it as earthy  i don't think she liked it so much.

I saute fresh chopped garlic, spinach, and tomato. Serve on top of the quinoa with a bit of crumbled feta. SO good.

Use it in everyway that you would normally use rice. Great in stuffed peppers, makes a good breakfast hot cereal, pilafs, cabbage rolls, you name it.

Just watch your portion size. A very small amount has a HUGE number of carb grams. They are nice, complex carbs; but if you're counting your macros, quinoa will throw you over quickly.

A 1/4 cup raw quinoa has about the same breakdown as a 1/2 cup raw oats. Gram for gram they're about the same, but a serving looks miniscule on your plate.

Quinoa is very yummy. Its actually a grass, not a grain, and high in protein, folate, and lots of trace minerals.

I  quinoa but have not had it in a while... not sure why!

its great topped w. grilled chicken & peppers/mushrooms and green beans (all grilled together), w. garlic and fresh stewed tomatoes w. basil.

I love this stuff too :) Lots of protein (for a grain) and a mild flavor. You can treat it just like any other grain like rice or couscous, but it is pretty calorie dense. Be sure to rinse it before you use it to get the saponins off or it may taste kinda bitter.
