Chop all of these items to taste:
Tomatos
Onions
Cilantro
Serrano Peppers
The reason why I say to taste is that for some, cilantro is an aquired taste and not everyone can tolerate the peppers.
After you mix the above, squeeze some lime over it. I also add a teeny bit of minced garlic (I'm puerto-rican, I therefore eat garlic) and a dash of cumin.
Serrano peppers don't have the stomach burning properties that jalapenos do and that's why I use them here.
This recipie is very versitile. You can eat it as is on the day it's made on top of grilled meat. The next day you can cook it on the stove with a spray of olive oil and pour it over chicken, beef or tuna. I've even mixed it fresh with canned tuna for something different. They work well together.
