Is there any way to substitute something for the peanut butter and protein powder? cottage cheese? egg whites?

Trial & error. I would experiment in your free time.

Maybe just oats and egg whites, baked and cut into bars? I'd add Splenda and cinnamon or something. You can always make them into pancakes and carry them in ziploc bags. I can't think of a decent substitute for the peanut butter than would hold everything together.

I make these muffins and take them to work everyday and everyone I've given the recipe to loves them.
1 cup oats
12 egg whites
cinnamon
splenda
1/4 cup SF syrup
Mix everything together. Bake at 350 for 20 minutes. Makes 6 muffins. Make sure you spray the pan with Pam or something first because they will stick. But they are clean and filling. I love them.

This recipe is really good, I've made them many times and they are very portable.
Do you cook the oats first, use them raw, or grind them into a flour?

The oats will cook when you put them in the oven to bake. I don't grind mine up into flour; they don't congeal very well if you do that.

You can leave out the syrup completely if you want.

even better, thanks! :D Is 12 egg whites equal to around a cup of egg white substitute?

I think so; my mom makes hers with egg beaters because she doesn't want to crack the eggs.
