View Full Version : Suggestions for cottage cheese.

Hi there,
This is my first week on the program and so far so good, it really is too much food to get through. But i'm not a huge fan of eating cottage cheese on its own. One of the meals is whey protein, natural peanut butter and 125g cottage cheese. Now i tried to mix all this and make it into a mousse, but it taste that good (my brain was thinking this is cottage cheese not mousse).
Does anyone have any good suggestions as to other ways i can eat it?

Have you tried blending it all? I have the same meal on my plan and I either just drink the whey with water and eat the CC with the PB (nuke both and mix until a little bit warm and gooey...yum) or else I will throw it all in the blender with about 8oz water and have a little shake. A usually put cinnamon in if I do it that way.

:shhh: actually you can blend it all and then freeze it - might be able to trick ur brain into thinking its ice cream if you do that... :shrug:

I'm going to give zapping it in the microwave a shot, and then i''''m going to try freezing (mmmmm ice-cream.....well sort of).

mix the cc and pp with a bit of sf/ff pudding mix or sf flavoured syrup....if you don't like the texture of cc you can whip it up with a hand blender to make is smooth and creamy....also search for the recipes for cc/pp "ice cream"

pb is best savored all on its own:girly:

Blend it and freeze it. Good stuff.

Also, different brands of cc taste different. You may need to play around.

My pb never makes it into anything. It is indeed best on its own.

That said, i asked to have my cottage cheese doubled sans the PP (i dont like the PP concoction) and then i add sliced almonds in stead of pb.

Erik made it while he was here...that nasty mixture and I tasted it...oh my...so bad.

He put in it: PP(cookies and cream), peanut butter, splenda, and BLUEBERRIES(ths one threw me..it sure does not go with the rest!!!) He said"mmmm isn't it so good" :ban::chairshot: I couldn't get that taste out fast enough.

newbie here...to the board, not to the lifestyle.

I will confess, I am a cottage cheese freak. Probably go through 4-5 cartons of the stuff each week. I keep them at home and at work. And yes, I get crazy looks and comments about how my PP-and-CC breakfast looks like monkey barf. YUM...haha.

I usually mix my CC with Lean Dessert banana creme pudding PP and a tablespoon of natty almond butter. Either that or some sort of Smucker's Sugar-free jam (raspberry is really good) and a half-teaspoon of hershey's dark chocolate cocoa powder (the unsweetened kind). Chocolate-raspberry...not the prettiest, but it works for me.

I like PVL cookies and cream with cottage cheese, pb splenda or SF Torani Vanilla blended with ice and a spnnkle of xantham gum to thicken. No blue berries though that really doesn't seem to fit. A half a banana might be good if I could have banana's but I can't.

Dito. Cottage cheese is like crack-cocaine for me. I eat about 4 cups a day right now.... so good.

I usually mix mine with PVL chocolate peanut butter or sugar free maple syrup and extract along with a lot of Splenda. That's my best advice, for taste anyway...the more splenda the better :p.

Oh and I actually like mine a little watery so I mix a tiny bit of skim milk in as well. Meanwhile, I am getting the best looks from my family. It's truly priceless.

I have never, at any point in my life, been a cottage cheese freak. I can tolerate it now, though. Hell, I can even eat it without disguising it. This is a MAJOR improvement. :cheat:

I like to mix it with fruits if I'm eating it by itself (pineapples, mangoes, peaches, cantaloupe, grapefruit).

If I'm making a shake, I do that nasty combo Erik made. :funny: I use about 1/4 cup of cottage cheese, a scoop of protein powder, 1-2 tsp of peanut butter, splenda, sugar-free syrup, and fruit (strawberries or blueberries).

To cook, I mix it with tuna like Nicki suggested. I make tuna melts by simmering a can of tuna, cottage cheese, celery, onions, peppers, and spices, and then pour it over a slice of wheat bread and toast in the over for a little while. It's a little runny, but it tastes good to me. :cheat:

I've actually just nuked it a little to take the chill off it and then added in my strawberries. Just looking for something different I guess. :shrug:

I love how versatile cc is. I like it sweet and savory. W/ salsa and chicken, it's so good.

Oh, I am so boring. The only way I eat CC is with berries & a little stevia on it.

I ate WAY too much CC in the past and find it is something I could easily live without. I don't dislike it but it really doesn't thrill me & I have to remind myself to eat it. :shrug:

Blend protein powder (I've only used chocolate), cottage cheese, and some ice cubes...maybe some splenda until smooth...you might need a little liquid in there, too. Then stick it in the ice cream maker. :yum:

I usually just eat it with splenda and some blueberries, chopped nuts, or PB. So good. Also, I only use Michigan brand cottage cheese...the rest is :barf:

The other thing I do, on a refeed day, I have put it on baked chips, melted it, and then top with salsa. That satisfies my Mexican cravings. :thumb:

layer grilled eggplant, zuchini and yellow squash in baking dish in layers with cottage cheese, salsa or tomato sauce, orgeano, garlic salt and pepper. bake at 400F until heated through.

sautee garlic and onions until tender... add shredded cabbage... continue to sautee till tender... season with S/P... transfer to serving bowl, mix in cottage cheese (it gets all melty and :yum: ) and then top with parmasen cheese :drool: sooooooooooo good!!

In a blender combine 1/2 cup cottage cheese, vanilla extract, cinnamon and stevia (or whatever sweetner you use). blend until smooth.

Top on 2 slices toasted Ezekiel bread, with either sliced strawberries, banana, thin slices apple or jam/jelly of choice.

*really good to add either natural peanut butter or almond butter to the cottage cheese before blending, then put on toast.

mmmm yes i love to toast a bagel, then spread CC with spices mixed in before, or tuna mixed in, then stick it under the broiler for like 3 minutes.....OMG so good!

My favorite is dry curd cottage cheese. I like it plain or with a little sea salt, super low in cals too. 2T (32 g)=15 calories, no fat, 3g prot, 1g carb.
I love sweet potatoes topped with 2T dry curd cottage cheese + 1 teaspoon nonfat Kefir (plain). Good with sea salt, spinach, and grilled chicken.
I like sour, savory, salty recipes, so if you need ideas let me know. I think I am the only one who doesn't like anything sweet :p

I just got Syntrax's Cookies and cream pp and mixed it into cottage cheese with splenda and a bit of milk. Tasted just like an oreo blizzard to me. (well okay, not just like...but close)

I got this recipe from Paula Deen - and surprisingly it is very good. I made it this weekend.

1 (12-ounce) container low-fat (1 percent) cottage cheese
2 (0.3-ounce) boxes sugar free strawberry gelatin, plus 1 box (recommended: Jell-O)
1 ready-made light graham cracker crust
1 pint fresh strawberries, plus extra for garnish
1 (8-ounce) container frozen light whipped topping, thawed

Put cottage cheese in a blender. Make 2 boxes of the gelatin, using 1 cup of hot and 1 cup of cold water. At once, before it jells, add to cottage cheese. Blend until smooth. Pour into crust and refrigerate until set. Cut up fruit and place on top of pie. Make remaining package of gelatin as per instructions on box. Pour it on top of fruit and put it in refrigerator until set. Put whipped topping on top. Garnish with more fruit.


I made it with no crust and no cool whip.

cottage cheese with pasta sauce = a little bowl of lasagna

cottage cheese in a salad keeps the salad moist and you can avoid putting dressing on it

Try this:

Slice and saute eggplant with spices in pam in a pan.
Top with CC and Walden Farm Calorie Free Marinara (they have it at Cub, not great but better than nothing)
Stick in Broiler= egg plant parmesean

Take PP add water and mircowave to make a little brownie and top with PB for desert.

Had this yesterday minus the PB

Got a magic bullet? Makes perfect 'ice cream'

Maybe see if you can sub some of the cc cheese for a bit more of the whey, add crushed ice, water and a smidge of xanthum gum ( opt just fiber) also changes the texture. Sub equal quanities pb for g's of sliced almonds that you will stir INTO your 'ice cream'

Grab a spoon and enjoy :D

You didn't go back and read my journal, the cinnamon does not mix well with the cc or pb, the tastes don't mix. The cinnamon i have on it's own for breakkie.

I wish you lived closer I'd make you some you'd love it. Or I'd beat you till you did :funny:

Not only did I read it, I wrote it down. But the BSN one you suggested wasn't listed as a graham cracker cinn. I think it was called cinn roll (which alone sounded pretty darn good) so I thought if I had a couple options, maybe I'd get lucky.:clap:

And I'd love if you just made it and shipped it. I'll have my DH beat me if I don't like it. Of course he'd hate for you to know that I can kick his arsssss even if he is 6'6". Wuss. ;)

I like to make it ahead of time and put it in the fridge also to make it nice and cold :yum:

Be careful with the BSN. Erik told me :nope: except PWO if you count the carbs as part of your allowance.

I really, really like cottage cheese and oats together. Make the oats with water then add cc and nuke for an extra 30 seconds.

I mix CC with flavoured yogourt, PB or AB, Splenda and vanilla extract.

I then freeze it until it's almost frozen and enjoy. :D

LOL! You make me feel a whole lot better for sharing that :) :) So, I guess I don't have to feel bad that I don't eat cc, right? I have the same problem (please don't shoot me!) with rice cakes. Everyone really likes these and no matter what I do to them they taste like cardboard and I just don't feel satisfied after having eaten them.
