I modified this from my mom's recipe so that it's healthier! This makes a very large amount....I had it tonight at my parents house......very very delicious!
1 bunch of Bok-Choy
1 bunch of green onions
1 package of Raman Noodles (do not use seasoning mix)
5 ounces of almond slivers stir-fried in pan w/ cooking spray, you can use less if you want and just put them right in w/out stir frying them)
Dressing:
1/4 cup of olive oil (more or less to taste)
1/4 cup of splenda (more or less to taste)
1/4 cup of cider vinegar (more or less to taste)
2 tbsp of soy sauce (more or less to taste)
Thoroughly wash the bok-choy, tear and chop entire bunch into bite size pieces. Add cut up green onions, cut into 1/4-1/2 inch pieces. Crunch Ramen noodle packages to separate the noodles. Add all of these things along with the almonds into a bowl. Toss with dressing immediately before serving!
