Could you all share recpies for things you eat on your low days? I'm tired of eating meats w/ the same seasonings and side dishes.

All these can be altered to fit specific needs
1 1/2 lb ground beef (lean)
1 package taco seasoning mix (Taco Bell, Ortega, etc.)
1 green onion, finley diced
2 eggs
1 clove garlic, minced [optional]
1 block sharp cheddar cheese, cut into small cubes
Preheat the oven to 425°F.
Beat eggs and mix all ingredients except the cheese together. Mold a Tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat. Place on edged cookie sheet (sprayed with PAM) and bake at 425°F for 7 - 10 minutes or until meat is done and cheese has melted.
Serves 10-15 people. Less than 1 carb per meatball.
Spinach Burger
1/2 onion (diced) sauteed in EVOO
lean ground beef
spinach (eyeball)
sautee onion in EVOO, in a ball combine beef, spinach (I use frozen but thaw it) combine together , mold into patties and cook ( I grill mine on the Foreman)
Then I'll top w/ a little mozz. cheese
Crustless Spinach Quiche
1 tablespoon vegetable oil
1 onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
5 eggs, beaten
3 cups shredded Muenster cheese
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

I don't know. My favorite is still the shrimp stirfried w/olive oil, garlic, dijon mustard and splenda...soooooo yummy!

I cook a chicken breast and then cut it open and stuff some cottage cheese in there. So. Good.

I did something similar this morning with eggs.
Made a 2 whole egg-omelette, melted light string cheese on it, and topped with 1/2 oz slivered almonds. Also did another meal with same thing except substituted cc for the string cheese. I thought I'd died and gone to heaven. Makes me want to do low days more often. :p

you can. I like Tony Chachere's for a little zing. or just pepper and salsa, etc.

I think I eat a broccoli stirfry on every low day! I season my sliced chicken with ginger, thinly sliced garlic and a few dashes of soy sauce and let it sit in a ziplock while I toast some sliced almonds in a pan sprayed w/nonstick spray. I set them aside and stirfry the about 2 cups of broccoli till they turn bright green. Then I set them aside and cook the chicken till it's almost cooked thru and add the broccoli; cook till it's crisp-tender then toss in the almonds. So yummy :drool:

I eat so muh canned tuna on low days, it's rediculous! I don't even feel like turning the handle on the can opener. :yell:
I usually sleep in so there's less time to think about food. :lol:

pp - cc - ice - water: blend into a shake (w/cinn. and splenda).
egg whites - yolk - spinach - tomato - seasoning: cook in frying pan like an omelet.
chicken w/dijon mustard, almonds, cucumbers.
tuna w/olive oil, dijon mustard :love:, lettuce, and banana peppers.
pp - cc - natural pb (w/cinn. and splenda)
egg whites - sf tomato sauce - cheese: cook egg whites in frying pan then bake in oven w/cheese and sauce...egg white pizza (sort of. I think I got that one from someone on here) :unsure:
Lotsa veggies:
steamed asparagus
baked green peppers, mushrooms, & onions w/a drizzle of Newman's lite Sesame dressing
cucumbers (these save me all the time)
spinach
steamed green beans
I've never tried salsa w/cottage cheese but that sounds pretty good too!
And diet coke. :ban:

And you know what ELSE is good? Hearts of romaine. Cut long and then pile tuna on there with some mustard. Mmm mmm....

Chicken, egg whites, red pepper, mushrooms and green onions.
So good.
Saute cabbage, onion and garlic in a little olive oil for about 20 minutes. Remove from heat. Stir in cottage cheese. Top with fresh parmesan, salt and pepper. :)

I do that, minus the onions-I add yellow squash.
ate it yestarday and then this morning.... then sprinkle with Lawry's salt :love: so good!
another one:
grill chicken or scallops w. cut up veges of choice, Lawrys seasoning or garlic, lil soy sauce. after cooked. throw in cubed avocado. let warm slightly. then top on bed of baby spinach.

I eat generally the same things on my low days:
-Egg White Pizza (6+ egg whites cooked omelette-style until it makes a "crust," topped with tons of veggies and optional cheese and baked at 350 degrees)
-Grilled Chicken Balsamic Salad (A knockoff of the Longhorn Steakhouse Sonoma Chicken Salad - which I love!! - salad greens topped with tons of veggies, pepperocinis, feta cheese, balsamic vinaigrette dressing, and grilled chicken)
-Taco Salad (extra lean ground beef or chicken with cheese, salsa, lettuce, and optional reduced fat sour cream)
-Jalapeno Poppers (These make a great snack!! Core the insides of a jalapeno, fills with fat free cream cheese, and pop in the toaster oven until cheese begins to melt and peppers are soft. YUM!!)
-Cottage Cheese and PB (My low carb STAPLE dessert!! Cottage cheese blended with cinnamon and splenda, and then mixed with Smucker's Natty PB. AWESOME!!)
Those are pretty much the dishes I stick too. I actually LOVE low carb days!! :p

so i was getting bored with my usual shrimp... came across this today...

I just mixed CC, PP, egg white, Splenda w/ hand blender. Microwaved for a few minutes. Then put in the fridge for awhile.
Turns out like a cake, if you imagine long enough. :lol:
Tastes choc-cheesecakey. Pretty good.

This sounds interesting. I think I'm headed to the kitchen to make it to eat later.
This is sooooo good!! Tastes like cheesecake. I added a little sf choc syrup to mine. I want more now!!!!!

salt pepper
cube spinich
curry powder to taste
mix well and cook like a omelet
when cooked add a tbl spoon cottage cheese to garnish and enjoy

I started doing egg salad made with a whole egg, egg whites, and cottage cheese rather than mayo. With chopped bell peppers and lots of salt. Romaine as a sandwich holder.

This is a new favourite while I'm carb cycling -- a friend of mine told me about this and I eat it at least once, sometimes twice a day, lol. I just love it. She calls it a "mock danish"... she uses cream cheese, I use ricotta because thats what I had at the time and I love it that way... I think ricotta has more protein in it too??? Not sure.
MOCK DANISH
100+ grams of cream or ricotta cheese (I usually use about 125 - 150)
1 egg
Splenda to taste
Mix it all up, stick it in the microwave for 2 and a half minutes... DELICIOUS!!! It's like a fluffy cheesecake, not too sweet, just perfect.
I also love tuna san choi bao... lol. It's my little variation on a Chinese favourite. I get the largest, malleable but sturdy leaf of lettuce I can find, open up a can of tuna, stick some tuna in there, some cheddar cheese, maybe a slice of tomato or sour cream anything else appropriate I have in the fridge, wrap it up and eat it.
You can do a more traditional one with ground turkey seasoned in soy sauce, garlic, ginger and maybe some splenda, cilantro... yummy. Or taco meat. The tuna option is the quickest for when you're tired, grumpy and hungry and you just wanna eat 5 minutes ago. I buy this tuna with chillies in it, so I don't ven have to season it half the time :)
OK, I'm getting hungry now!

I love making salt and pepper squid.... slice up some squid rings, season with sea salt and black pepper, place on baking tray, spray lightly with oil and cook for 15 minutes. I usually have it with asparagus, beans, peas or sweet potato... I'm just about to have some for lunch!
