I have a couple questions about tofu and beans
How do you guys view tofu and beans - as protein or as protein and carb? I guess what I am asking is if you are planning a meal with a certain # g protein, fat and carbs it seems like if you eat tofu or beans as a protein source then it ends up being your carbs for that meal, too? So, do you only eat tofu/beans for that meal or what?

With most any given food (unless it is meat) you will have carbs and protein (though this is obviously not true with fruit etc, but even some veggies have protein, although not a lot) and quite possibly fat in it. Look at grams, not just by classifying foods as protein or carbs. I consider tofu a protein mostly, but it does have carbs and that has to be taken into considering when planning the whole of my meal plan. The same goes for beans, although beans are a wonderful source of carbs as well as protein.

Actually now I have a new question but I am not sure if I should start a new thread for this because I am not sure how many people on this board would be interested Pandora but my new question is what iyo is the best protein source for vegans and should I be rotating/varying my protein source or would it be bad for example to eat tofu at each meal?
I have a second related question, too. I really like seitan but I keep reading recently in Oxygen and some other place too that people are allergic to wheat gluten so I was wondering if I am actually doing more harm than good if I eat it.

Actually... maybe I'll put it in the recipes section. It's going into my cookbook, but I'm positive that every single person who tries it will like it if I post it here and it would be very interesting to see non-vegan/vegetarian responses to it.
