Ok, so I cook a LOT. I create a lot of recipes. I'm going to flood the board for a bit and flesh the section out some. :)
Bruschetta Cottage Cheese
In a bowl mix:
1 small or medium chopped tomato
1/2 tbsp olive oil
1 clove crushed garlic
pepper
fresh chopped basil
Let the flavors mix for a few minutes. Then add to 1 cup low fat cottage cheese. Mix and eat. (You can also heat up the bruschetta mixture before adding to cottage cheese).
