Gluten Free Flour Recipe (It wouldn't let me post it all as one)

For Gluten Free Flour - I use this recipe (courtesy of Carol Fregosi)
2 Cups white rice flour (I've used brown also)
1/3 C tapioca starch (or flour) * I use corn starch
      2/3 C potato starch
For every cup of this add 1 tsp guar or xantham gum.

Use as the "flour" for all your recipes. I usually mix up enough to fill a tupperware container. Then flour is ready whenever I need it.

I've read around and many celiac/gluten free places are saying that even less guar/xantham gum can be used and the flour will still work

      Here you go :)

      From Betty Crocker's Chocolate Cookbook

      1/2 C - butter
1 package (12 oz) semisweet chocolate chips
      1 2/3 C - sugar
      1 1/4 C - flour * I used a gluten free mix, but any kind will work
      1 tsp - vanilla
      1/2 tsp - baking powder
      1/2 tsp - salt
      3 eggs
      1 C - chopped nuts if desired ( I skip these usually)

Heat oven to 350 deg. Heat butter and chocolate chips in saucepan over low heat, stirring constantly, until melted. Beat in remaining ingredients except nuts until smooth. Add nuts. Spread in greased rectangular pan, 13x9x2.

Bake until center is set, about 30 minutes; cool completely. Cut into bars, about 2x1.5" - 36 bars

      LOVE them!
